Description
in 1842 Thomas Dixon Ridley built his brewery on the banks of the River Chelmer. It was here that the Ridleys’ great tradition of brewing was born. The brewery thrived and Ridley’s beer was enjoyed at inns from Southend to Saffron Walden. Over the next 163 years six generations of Ridleys honed their skills and perfected their palettes to bring the people of Essex the best local brews, until the brewery was sold in 2005. In 2012 Nelion Ridley takes up the mantle once more, and with his craft brewery ‘Bishop Nick’, is devoted to keeping Essex ales sacred.

Half-pint, cask ale at Cambridge Blue. Clingy lacing from a filmy layer. Clear dark golden body. Moderate smell of grassy hops. Fresh hop fruity flavours with hints of leafy hops and vague caramel malts beneath. Mid-dry fruity finish. Summer feel. (Cambridge 10.07.2019).

500ml bottle. Darkest brown colour with small, bubbly, fading, beige head. Weak, roasty dark malty aroma, hints of coffee, fruity hoppy overtones with a touch of berries. Taste is slightly bitter, roasty dark malty, diluted hints of coffee, fruity hoppy overtones with hints of berries and a minimally metallic touch. Quite anaemic.

Cask gravity at the Watford beer festival 2018. A Clear toffee copper coloured pour with a a fine off white head. Aroma is semi sweet cakey, malts. Dusty nutty malts, raisin loaf. Flavour is composed of semi sweet nutty malts tangy dried fruit, twigs. Palate is semi sweet, nutty moderate cask condition. Not bad.

500ml bottle. Clear, yellow-ish, pale golden colour with average, firm, frothy, half-way lasting, minimally lacing, snow-white head. Floral, slightly fruity and minimally citrusy, hoppy aroma, bscuity malty background, hints of gooseberry and rhubarb. Taste is minimally sweet, biscuity, pale malty as well as fruity and floral hoppy, hints of gosseberry and rhubarb, a touch of pollen and honey; minimally oily texture. Light, refreshing, drinkable.

Pours a clear amber colour with a smallish frothy off white head. The aroma is malty, some caramel, grass and a little fruit. A malty taste, caramel and fruity flavours and a twiggy dry bitterness in the finish.

500ml bottle. Clear, faint, dark amber colour with average, frothy, half-way lasting, minimally lacing, off-white head. Fruity and minimally leafy, slightly citrusy, hoppy and mellow malty aroma, initial hints of red berries and corresponding shrubs find themselves widely replaced by condensed mandarine jelly notes, minimally nutty malty undertones. Taste is slightly bitter, dry, nuttily malty and slightly fruity hoppy, cautious hints of orange and mandarine, a leafy touch.

500ml bottle. Minimally milky, yellow-ish golden colour with average, frothy, half-way lasting, minimally lacing, white head. Biscuity pale malty and fruity hoppy aroma, hints of apricot, mirabelle, a touch of mandarine and orange. Taste is minimally bitter hoppy, slightly fruity, minimally sweet, biscuity pale malty, hints of mirabelle and apricot. OK.

Bottle 500ml. @ The Shnoodlepip, London. [ As Bishop Nick Arise ].Clear medium amber colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, hay, caramel, blackcurrant. Flavor is moderate sweet with a average to long duration, nutty, caramel, blackcurrant. Body is medium, texture is oily to watery, carbonation is soft. [20160805] 6-3-6-3-11
