It all started with a neighbor sharing a homemade beer. Liz saw how excited Jamil was and bought him a Mr. Beer kit for Christmas. Jamil became obsessed with brewing the perfect beer and became a homebrew legend in the process by winning a first-place medal in every known beer, mead, and cider style category. Eventually, his passion to brew was too strong and Jamil and Liz decided to take the plunge and open Heretic Brewing Company.
We started by sharing a building with another brewery in 2011, but we always brewed our beer ourselves. Within the first six months we realized there wasn’t enough space for two breweries in one building, so we began the search for a new place. By 2013, we had built a new, modern brewery in the wonderful city of Fairfield, California and moved all our operations there, including our new distillery.

Nut brown colour, good creamy beige head and lots of lace. Mostly nutty malty aroma. Medium-bodied. Nutty, some caramalt, some fruity hops in the flavour. It has a kind of English strong ale vibe. Probably hoppier when fresh. Ok.

Tap at Hair of the Dog, Phrom Phong. Poured a clear dark brown colour with a thin off white head. The aroma is roasty malt, liqouirce, light toffee vanilla. The flavour is liquorice bitter with a roasty, big boozy, liqouirce bitter palate. Medium to full bodied with flat carbonation.

Draft at Brody’s, Den Haag. Near clear red with a small pink head. Aroma of tart blackcurrent, raspberry, light oak and vinous notes. Flavour is light moderate sweet and bitter. Medium bodied with soft carbonation.

Can from Total Wine in Folsom, CA. Pours translucent gold with a white head. Aroma is bready with a spice note. Med body or so. Flavor is bready with some moderate Noble spiciness. Towards dry. Mildly bitter. Rather refreshing.

Deep, pitch black coloured body with a very thin, but noticeable tan head that barely registers a centimetre tall. Aroma of super pungent roasted malt, nuts, earth, toffee, caramelised sugars, star anise and even a pungent amount of the bourbon and vanilla from the aging process. Full-bodied; Strong rich roasted malt with vanilla, alcohol, toffee, earth, grain and oak all front and Centre, but the big flavours stem from the vanilla, roasted/burnt malt notes and especially the chocolate flavours toward the end. Aftertaste shows the longest and most complex set of tastes with some star anise, a big hit of hazelnuts and grainy flavours, but the chocolate, peanuts, vanilla, oak and the bourbon flavours are the strongest. Overall, a very nice Imperial Stout with a ton of flavours, showing the good vanilla and oak notes that you'd expect, but goes down fairly easily considering all the malt and the bourbon flavours that show up immediately after having a sip. I sampled thisimple nine ounce pour on draught at the Heretic Brew Pub in Fairfield, California on 14-March-2019 for US$6,00 sampled while visiting Northern California!

Super deep and completely opaque black coloured body with a thinnish, very fast-dying off-white head that barely stays afloat. Aroma of very soured cherries, raspberries and prunes with a tart note, some light chocolate and even a bit of coffee noticeable towards the end. Medium-bodied; Super pungent vinous flavours with a lot of cherries, grapes, figs, prunes, raspberries and especially alcohol noticeable throughout, but there is a touch of chocolate in addition to some very toasty malt notes that are quite strong and balance this out nicely. Aftertaste shows the fruits front and Centre with a ton of sweetness, a lot of pitted fruit and pungent toffee and caramelised sugars on the edges, but the tartness stemming from the Belgian yeast strain is unavoidable, in a good way. Overall, a very nice Belgian Quad that shows a perfect balance of punch, malt, tartness and especially the fruity sweetness that reigns supreme on this one. Great to sample and well worth grabbing or trying if you can get your hands on it! I sampled this nine ounce pour on draught at the Heretic Brew Pub in Fairfield, California on 14-March-2019 for US$6,00 sampled while visiting Northern California!
