De bieren worden gebrouwen in een moderne 25 Hl installatie in Erpe-Mere. Gelet op de sterk groeiende vraag en het plaatsgebrek op de huidige site werd de brouwerij voor verdere groei genoodzaakt uit te kijken naar een bijkomende locatie. Deze werd gevonden in de Industriezone AALST ZUID III, waar een bijzondere ruime productiehal werd aangekocht. Deze werd volledig gerenoveerd en uitgerust voor de verdere expansie van de brouwerij. Op deze site werden 6 gekoelde cylindroconische gistingstanks van 37 Hl/elk geïnstalleerd. Tegelijkertijd werd er een nieuwe Italiaans- Duitse afvullijn geplaatst voor 33 cl flesjes, en een ultramoderne hergistingskamer.
Ondanks alle investeringen in high-tech toestanden blijft de missie van de brouwerij ongewijzigd: op ambachtelijke wijze smaakvol natuurbier brouwen in een moderne installatie, met enkel de beste grondstoffen en zonder toevoeging van om het even welk kunstmatig additief!

Bottle @ Kerstbierfestival 2007 in Essen, BE. Unclear medium to dark yellow color with a large, frothy, good lacing, mostly lasting, off-white to white head. Aroma is moderate to light heavy yeasty and hoppy, grapefruit, sour sweet, fruity. Flavor is moderate sweet, light bitter and moderate sour with a average to long duration. Body is medium to light, texture is oily, carbonation is soft. (151207)

From bottle, Kerstbierfestival 2007 in Essen/Belgium. Pours hazy yellow with a lacing white head. Slight fruity and malty aroma. Flavour is mild sweetend and with a mild yeasty note. Finish is slight bitter and lingering yeasty with a mild bitterness into the finish. Solid yeasty and mild spiced brew. Lovely.

RB Belgium #300: 75 cL bottle, Kerstbierfestival 2007 in Essen/Belgium. Pours hazy amber with a huge off-white towards light brown head. Mild sweet malt and slight fruity. Prickling carbonation. Flavour is caramel malty, slight sweet and with a note of fruit and some yeasty spices. Ends with a lingering malt flavour. Nice.

Kerstbierfestival 2007 Von diesem Bier wurden lediglich 20 hl gebraut. Herber Antrunk, etwas bitter, in Teilen fruchtig. Eingeschränkte Hefigkeit, etwas alkoholische Bitterkeit im Nachgeschmack, kurz vorher steigt die Hopfigkeit stark an und wirkt etwas übertrieben, zuletzt kräuterartig. Bottled@Kerstbierfestival, Essen. Hazy yellow colour, small white head. Aroma is cellar, fruits and yeast along with some mild earthy and woodenness. Flavour is the same in a perfect balance.

Bottle Kerstbierfestival 2007: Poured a hazy golden blonde with a white head. The aroma was fruit citrus and yeast. The taste is hoppy metallic with nice bitter splash to the tastebuds, there is also that citrus presence.

Good whipped egg-white head, very muddy beer with a greenish bathtube shine. Spicy nose, but all the spices blending well together, so as none comes out. Maybe a bit citrus & juniper berry. Sweet-sourish taste, hint at coriander and citrus. Soupy, perfumey, coming on stronger warming up. Rather creamy MF but alleviated by a very present carbonation. Medium bodied. Please, Jef, go easy on the spices. An excellent beer doesn’t need to impose itself.

Bottle: Poured a deep cloudy yellow/beige color ale with a huge foamy head with great retention and loads of foam sticking to the glass. Aroma is quite spicy which is probably coming from the yeast strain used by the brewer. Taste is a mix between some deep semi-sweet Belgian malt, some fruity ester and a spicy finish from the yeast with some light funky notes as well. Body is full with limited filtration with some great carbonation. Very well done overall but I still think this is a notch below the Dupont.

Bottle. Dark amber beer with a huge tan head. Spicy, dark malt, raisin, fig, yeast aroma. Spicy, yeasty, rich caramel malt flavor with backing raisin/fig. LIngering caramel, dark fruit. Fuller bodied. Nice complexity.
