Métaphore je řemeslný pivní projekt zaměrěný na pomalu vyzrávaná piva ve dřevě, ovlivněná časem a bio-diverzitou okolí a vlastní mixed culture. Piva odráží místo a čas vzniku, konkrétní roční období a lidi, kteří se na nich podílejí. Projekt Métaphore, je tvorbou Jiřího Sládka, momentálně sládkuje v pivovaru Clock a v temných zákoutích pivovaru se věnuje tvorbě vlastních naturálních piv a zároveň i barrel aged programu pivovaru Clock.

Bottle pour at the DCBeer December 2025 share. Poured a peach-hued yellow color with a medium sized white head. Aroma had some nice light yeast character, some mild earthy spices, light grapes. Pleasant carbonation, light funky notes, earthy, herbal. Liked this. Also, the bottle art was awesome.

The nose shows moderately intense vegetal notes and notes of vinous grapes and cherries.

The palate is well carbonated and medium bodied. Similar to Italian bitters with a dry fruit background of maraschino cherries.

The nose shows intense notes of sweet ripe peaches.

The palate is well carbonated and light bodied. Moderately tart with ripe peaches forwardness throughout. Fantastic.

Bottle 0.75l, three years aged. Almost clear, deep gold colored. AROMA- pear, apricot, quince, funky, leafy hops. FLAVOR- slightly sweet, slightly bitter, slightly tart, moderately sour, apricot, green apple, pear, funky, touch of leather, touch of hops. Medium bodied.

Bottle 0.75l, three years aged. Almost clear, gold colored. AROMA- nice mixed fermentation character, mirabelles, peach, meadow, spicy and herbal hops. FLAVOR- slightly sweet, moderately sour, lightly bitter, smooth malt base, the same as aroma. Medium, a bit more viscous body.

75cl Bottle. Split by SirAlex. Thanks. Pours cloudy golden Yellow with a small head. Barnyard, citrus and riesling. Fresh and crisp with a Slightly oxidized and woody note suiting it Well. Tasty! 4.2
