Description
Although we hail from Chicago, we met in Munich at the Doemens Institute while studying for our Master Brewer Certifications. While bonding over the great beers and food of Bavaria, we soon discovered a mutual respect for the traditional brewing methods of continental Europe. As two educated brewers cut from similar stock, we decided to join our talents and shared vision into a stronger form, like a dovetail joint.
Our goal is to produce beer of the highest quality similar to the level of craftsmanship found in fine woodworking. We are merging continental European styles and techniques with American creativity to produce the kind of beers found in small, family-run breweries in Europe.

On tap at Dovetail, pours a cloudy dark reddish amber with a small off-white head. Aroma is full of balsamic vinegar, Worcestershire, light wild yeast, and pitted fruits. Flavour has some phenols upfront, with tart pitted fruits, balsamic/acetic notes, and some wild yeast. Too much phenolic and acetic character. This needs a lot of work.

On tap at Dovetail, pours a clear bright golden with a small white head. Aroma is a bit harsh, with some phenols, wild yeast, and oak. Flavour is peppery and lightly phenolic, with black pepper, acetic notes, wild yeast, and some oak. A bit too phenolic and acetic for my taste, but it comes together more as I drink it slowly. Nothing remotely gueuze-like, but I guess I see how this is supposed to approximate that style. Interesting.

On tap at Dovetail, pours a clear blonde with a small white head. Aroma reveals a nice mixture of lacto and gentle brett, with a soft wheaty base. Flavour is wheaty, with lacto, gentle brett, lemony tartness, and some hay. Dry, tangy, yogurty finish. Definitely a step above most Berliners. Good stuff.

On tap at Dovetail, pours a deep dark amber-finger brown with a small beige head. Aroma brings out gentle smoke, lots of deep caramel malt, and some burnt toffee. Flavour is rich, with lots of caramel, burnt toffee, bready malt, and moderate smoke. Really nice, deep malt profile that never ends on complexity. Excellent.

On tap at Dovetail, pours a clear dark mahogany with a medium beige head. Aroma is full of nicely smoked, slightly ash malt, with bready notes and a hint of burnt toasted nuts. Flavour is much the same, with campfire smoke, some ash, and burnt toasted nuts. Pretty reminiscent of a Bamberg rauchbier. Very nice.

On tap at Dovetail, pours a clear amber orange with a small white head. Aroma reveals dry bready malt and a touch of caramel. Flavour is dry, with almost burnt bready malt and a hint of caramel. Finishes bone dry, drier than most alts I've had from Germany, but it's well-made. Good stuff.

Flavour is like a hef, in the sense that it has lots of banana and clove, backed by a slightly maltier character. It's not really my jam but it's competent.
