Description
Although we hail from Chicago, we met in Munich at the Doemens Institute while studying for our Master Brewer Certifications. While bonding over the great beers and food of Bavaria, we soon discovered a mutual respect for the traditional brewing methods of continental Europe. As two educated brewers cut from similar stock, we decided to join our talents and shared vision into a stronger form, like a dovetail joint.
Our goal is to produce beer of the highest quality similar to the level of craftsmanship found in fine woodworking. We are merging continental European styles and techniques with American creativity to produce the kind of beers found in small, family-run breweries in Europe.

Sampled from the tap at the brewery. Pours a clear amber orange with a white head that dissipates to the edges. Aroma has bread with a light sweetness and a hint of earthiness. Flavor has earthy grains and bread with a slight sweetness in the finish.

Sampled from the tap at the brewery. Pours a clear yellow with a gold hue and a white head that dissipates to the edges. Aroma has sweet grains and straw with a light bread note underlying. Flavor sweet grains and bread throughout with a hint of hay underlying.

Sampled from the tap at the brewery. Pours a clear Amber with a white head that dissipates to the edges. Aroma has biscuit and bread with a light earthy grain note and a light leaf note. Flavor has a nice grain and bread combination with a hint of sweetness supporting.

Bottle: Poured a reddish copper color ale with a dirty white foamy head. Aroma of smoked notes with some oak and cherry notes marries better than I was expecting. Taste is a mix of smoked malt notes which are very well balanced against oak and cherry notes from the Flanders red beer base. Body is about average with good carbonation. I wasnβt expecting anything great from this singular mix but this sib very well brewed and assembled.

A reddish copper ale with a thin off white head. In aroma, sweet ground cherry with light peated notes, light acidity, light Brett, light lactic notes, very nice. In mouth, a nice tart ground cherries with light acidity, light Brett, light peated notes, very nice and complex. Bottle at GRM dark Lord tasting, Oct 2018.

5 oz. sample at the brewery, served in a beaker. Deep brown with soapy head.,Aroma is pumpernickel bread, burnt toast and mild yeast. Reminds me more of A German bock. Dark bread, mild roast, earthy grains, and a hint of ash. Medium body a lot of dark malts. It is pretty much to style with the yeast hidden.

5 oz. sample at the brewery, served in a beaker. The aroma seems right on par for its style with a solid wheat, banana, and a clove backdrop. Flavor shows a citrus on the back of my throat to go along with the banana and clove flavors. Chewy yeasty texture as it should be. Nice.

5 oz. sample at the brewery. Server in a beaker. Cloudy gold with some spotty head. Aroma shows malt and yeast without any of the banana note. It shows clove upfront, Mild crackery sweetness. Yeast is not chewy. Well balanced and actually pretty enjoyable.
