L’idée de la bière a été lancée… Sur le moment, le pari nous a semblé osé ! Mais plusieurs rencontres providentielles nous ont amenés à reconnaître que cette idée était la bonne et qu’un tel projet était béni du Seigneur.
une aventure communautaire
Début 2015 : deux frères vont se former à Douai. Parallèlement, un biérologue enseigne l’art de la dégustation de la bière à quatre frères en vue d’élaborer un cahier des charges. Durant plus d’un an, les frères brasseurs élaborent – grâce à un matériel rudimentaire – une recette originale de bière française et monastique. Dans le même temps, d’autres frères travaillent sur le choix de la bouteille, la conception de l’étiquette et sur les aspects économiques et financiers du projet.
Début 2016, nous sommes prêts : aménagement des locaux, installation du matériel, on commence à brasser début juin ! La brasserie est officiellement inaugurée le 1er décembre.
Un mook, richement illustré, a été réalisé pour retracer cette belle aventure : la brasserie de Saint-Wandrille. Il est disponible au magasin ou en ligne.

Loose white head on hazy dull golden coloured body.
Clean, pale malt & grassy aroma.
Medium bodied, smooth soft & clean.
Apricot, boiled sweets, zesty citrus & pithy tastes with a sweeter tangy finish.

500ml bottle from L'Ecume des Bieres in Saint Malo. Pours a cloudy yellow with a white head. Aromas & tastes of fruits, herbs, alcohol & hops. Medium body. Slightly sweet finish.

24/1/2025. Bottle shared by minutemat, cheers Mat! Pours clear pale gold with a small frothy white head. Aroma is sweet, flowery, citrus, herbs, yeast, hint of spice. Moderate sweetness with some biting bitterness. Moderate body, average carbonation. Not bad.

500ml bottle from our recent trip to Normandy. Pours an unclear gold, overly large white head. Not the best blanche, lacks a bright floral sweet yeasty character. Fairly malty, with a herbal bitterness. It's an Abbey tick I suppose.

Mein Kumpel Bernhard bestellte sich Schuhe bei einer französischen 🇨🇵 Klostermanufaktur und der Shop bot auch dieses Bier an. Es ist angelehnt an die belgischen Abteibiere ⛪und dementsprechend malzig-süß. Von weihnachtlichen Hewürzen merke ich nicht so viel, aber der Körper ist schön balanciert und es lässt sich angenehm trinken. Die freundliche Hefigkeit unterstützt noch diesen Eindruck. Kein einfaches Bier, das aber trotzdem auch dem einfachen als auch dem bieraffinen Gläubigen schmeckt.

Huge thanks to quack-duck for that one! Bottle looks simple but good. Beer in the glass with a nice head. Starts mild, fine spicy notes, mild bitterness. Some herbal notes as well. Grasy-hoppy finish, mild sweetish touch. Interesting one!

Flasche im Klostershop (St.Wandrille). Beiger trüber Körper, viel fester Schaum. Aroma: Hopfen, Getreide, Weizen, Banane, Zitrus, etwas Pfirsich. Geschmack: Hefe, Banane, Hopfen. Voller Antrunk, wenig bitter.

Beim Brauer in der Normandie gekauft. Helles Braun- ins rötliche gehend, trüb, nur ein Hauch Schaum. Aroma: Karamell, Malz, etwas kalter Kaffee, etwas bittere Schokolade. Geschmack: wenig süß, etwas bitter, Karamell, Kaffee, sehr angenehm ausbalanciert. Fruchtig im Abgang.
