Inside the barn, which was built in 1954, stands today a new microbrewery from Premier Stainless Systems. The brewery consists of a total of 11 tanks. A pot, a boiler, a hot water tank, six fermentation tanks and two clarification tanks. Four fermentation tanks hold 1150 liters and two hold approximately 2500 liters. Much of the beer is fermented in these tanks, under controlled conditions.
In the basement under the new part of the barn, beer is stored for oak barrels of different sizes. This basement was built in 2016 along with the new part of the barn. Today, there are about 130 oak barrels with both beer and cider for storage and concoction.
The barrels are used before for wine production, bourbon and rum. They come from different parts of Europe and the United States.
On the third floor of the barn is an open tub. In the autumn, when the weather is right, we brew beer that is spontaneously fermented with wild yeast from the air at Lindheim. The brewing process itself is different from our "regular" beers. We use a different type of malt, raw wheat, old hops and a different spoon method. After cooking, the wort is cooled in this open tub called a "coolship". Here, wild yeast is caught on the surface of the wort. When the herb is 18 degrees, it is transferred to used oak barrels for both fermentation and storage. This process can take several years. The magical air of Lindheim is full of mysterious microbes and yeasts that are suitable for creating something unique from our region.

Drukket på Bergstua. Mørk amber. Klar. Høyt kremaktig skum med litt farge. Daler sakte og etterlater litt filigranser. Direkte pent å se på! Aroma av karamell & søt frukt. Dadler? Myk munnfølelse. Smaken malt, jordbærsyltetøy & litt sukkertøy. Tydelig bitter avslutning - med et vedvarende fruktpreg. Utmerket!

Bottle @ home. Slightly unclear amber body under a nice, big tan head. Aroma has malt, toffee and fruity hops. Taste is sweet malt, smooth toffee, marmalade, citric fruits and distinct but well balanced bitterness. Balanced body as well with a nice malty and bitter aftertaste. Registered as a amber lager for the moment but taste like a god old classic American amber ale or maybe a hoppy red ale. Not a typical Christmas beer (whatever that is) but will probably be a god and tasty match for the fat food with this level of bitterness. Highly enjoyed as it is anyway.

YG Oktober 2024. Golden color with no head. Aroma is apple, honey, alcohol. Flavor is apple, honey, raspberry, alcohol, spices, oak. Very nice.

Bottle, 375ml. An almost clear one, red with a golden hue, still and headless. Viscous and oily, leaving traces but not lacings when swirled in the glass. Really delicious but not very complex aroma of ice cider (concentrated apple juice and alcohol) and some raspberry, with oak, honey and some booze. Some vinous, spiced hints. It's full-bodied and then some, sweet and lightly warming, still and then even sweeter, with a pleasant acidity. The flavor is on another level, super-concentrated apple juice, raspberry, hints of honey, flowers, booze and oak. Can't really say I detect the rum barrels, at least not the rum, but some oak is present. Vinous, spiced, leafy hints. Lasting sweet finish with lots of fruit. I'm lost for words, this is so complex and tasteful it almost justifies the steep price of NOK 700/USD70 for a 375ml bottle. Well, it justifies the price so much I'll sure buy another bottle if I ever get close to one. 241019
