Description
Inside the barn, which was built in 1954, stands today a new microbrewery from Premier Stainless Systems. The brewery consists of a total of 11 tanks. A pot, a boiler, a hot water tank, six fermentation tanks and two clarification tanks. Four fermentation tanks hold 1150 liters and two hold approximately 2500 liters. Much of the beer is fermented in these tanks, under controlled conditions. In the basement under the new part of the barn, beer is stored for oak barrels of different sizes. This basement was built in 2016 along with the new part of the barn. Today, there are about 130 oak barrels with both beer and cider for storage and concoction. The barrels are used before for wine production, bourbon and rum. They come from different parts of Europe and the United States. On the third floor of the barn is an open tub. In the autumn, when the weather is right, we brew beer that is spontaneously fermented with wild yeast from the air at Lindheim. The brewing process itself is different from our "regular" beers. We use a different type of malt, raw wheat, old hops and a different spoon method. After cooking, the wort is cooled in this open tub called a "coolship". Here, wild yeast is caught on the surface of the wort. When the herb is 18 degrees, it is transferred to used oak barrels for both fermentation and storage. This process can take several years. The magical air of Lindheim is full of mysterious microbes and yeasts that are suitable for creating something unique from our region.

Deep red with a small white pinkish head. Aroma of red nerries, some spices sense. Light sour with a red berries finish.

Bottle, 375ml. Clear ruby red beer with close to no head, just a few bubbles. Funky aroma with lots of berries. Cherry, but a tad blackcurrant too. Hints of dark beer and apple juice too. It’s full-bodied, tart and nicely carbonated, dry and lightly warming. Berries, funk and some beer and apple in the flavor. Some pale malt hints. Lasting berry driven finish. Nice indeed, refreshing too. 241130

Bottle. An oily pour reveals a clear golden colored body. Still and headless. The aroma has a gentle booziness, with lots of apple, really rich. Apple pie, apple jam, apple juice and a both ripe and fresh apple. It’s full-bodied and lightly warming, oily, with lots of apple flavors. There’s a gentle touch of wood and forest too. Apple jam, apple juice, fresh apple and overripe apple. Sweetness, and a decent acidity. Lasting finish. Really delicious this one, the booze just adding a nice touch to the cider. 241130

Bottle @ home. Unclear golden body under a fine, foamy white head. A bit weak in aroma, bread, wheat with hint of coriander and banana. Taste is medium sweet malt, kinda fruity, some wheat, some banana and a floral touch. Balanced body with average aftertaste. Nothing outstanding, but a decent brew. Not very typical to a Belgium wit, perhaps more in the crossing between a blonde and a wit.

Bottle, 375ml. A clear one, deep golden in color, still and headless. Lightly boozy aroma with lots of good fruit. Apple and apple juice, apple pie hints. It’s full-bodied and quite sweet, not cloying though. The flavor too has loads of apple, concentrated, with a gentle booziness. Sweet finish with lots of apple and a pleasant booziness. Some tannins in the very end. Really nice this one. Struggle a bit to find what flavors and aromas are present, but it’s quite complex anyway. 241129

Bottle. A hazy amber beer with a nice but small beige head. Lacing. The aroma is resembling butterscotch, caramel and some bread, with a piney hoppyness. It’s full-bodied and gently warming, bitter and semi-dry. Pine cones, grapefruit and a good dash of toffee and caramel in the flavor. Lasting finish. 241129

30/11/2024. Bottle shared at Ulfborg tasting. Aroma is malty, plummy, twiggy, hedgerow, grape. Heavy sours, light sweetness, moderate bitters. Medium body, average carbonation. Long tart tannic finish. Good.

Bottle @Ulfborg. Clear golden, white head. Sour plums, grapes aroma, funky, some straw. Sour, juicy flavour, creamy mouthfeel. Fruity, citric with some malty sweetness. Long sour, tart finish.

Frothy white fairf mostly deminishing head, Yellow colour. Light malty and hoppy aroma. Modrate bitter flavor. Very acetic. Average light bitter finish. Creamy palate.
