(750ml swing-top bottle from L'Axe du Malt, Quebec City) Pours moderately hazy bright gold with almost no head. Notes of nice softly tart baking apples with a rich, floral and clearly tannic aspect from the Hyslop varietal, nice apple skin qualities, acidity is largely apple/lactic but with a bare hint of acetic, moderate Brett funk, balance is moderately tart and very lightly sweet with good tannic drydown leading to moderate bitterness in the long, flavourful finish with some minerality from the amphora helping to keep things crisp. Medium bodied with moderate but very filling effervescent carbonation. I liked this one better than the Dolgo, perhaps because the characteristics of the focal varietal are more prominent despite the majority being 'typical' apples. Very nicely made!

(750ml bottle from L'Axe du Malt, Quebec City) Pours moderately hazy dull gold with a rapidly fizzing white head that quickly dissipates. Notes of tart apple flesh with rustic tones and pretty solid earthy tannic structure from Dolgo skin, I assume, nice base notes, moderate funk and a little sulphur, especially on the nose, a clear minerality, overall balance is sweet-tart, drying into the finish, persistent tannin, some hay, crispy wild apple bite in the aftertaste. Medium bodied, light but quite fizzing carbonation. The amphora is interesting here, feels more on-edge than a barrel-fermented cider but stil a lot of the same depth. Would have loved a little more obvious Dolgo character though.

(On tap @ Le Projet, Quebec City, Nov 11/19) Hazy straw gold pour with no head. Aroma of baking apple, straw, moderate funk. Flavour is fairly high tart apple juice with lemony lactose, green apple skin, minerals, light Brett, long tart lacto finish. Lightish body with low to moderate carbonation. Definitely a session cider but it feels pretty decent for the very low ABV, with enough complexity to keep it interesting.

(750ml bottle from L'Axe du Malt, Quebec City) Pours nearly clear medium orange with salmon highlights and a small white head without lace. Aroma is heavily Bretted and woody, lots of wild-fermented apple, fruit skins, light rosé wine vibe from the berries/grapes, tannins, dusty horseblanket, leather. Flavour slightly less heavily Brett, light sweet and moderate acidic, notes of tart apple and rosé, strawberry a little more prominent, leathery wood and tannins, bone dry in the finish with lingering funky apple in the aftertaste. Medium body, fairly high but filling natural carbo. The adjuncts don't take over which is nice, but the complexity here is not quite on the level of Assemblage Orange.

(750ml bottle from L'Axe du Malt, Quebec City) Pours a lightly hazed straw gold (layer of bottle sediment) with a touch of orange undertone, rapidly fading fizzy white head. Aroma is bright dry cider, yeasty cidra vibe, musty Brett, a little white wine, citrus peel, sea buckthorn saline acidity there if you look. Flavour is quite dry, light acidity, good crisp fruity sidra vibe, hints of white wine and skin tannin, a little tart sea buckthorn, mineral, with light Brett and barrel notes, good very soft tartness into the finish. Light to medium bodied, good lively carbonation. A nice cuvee of cider where the fruit additions definitely don't take over but augment the apple treatment, nice wine-like quality.

Bouteille 375ml. Couleur jaune voilée, mousse blanche disparaissant en un éclair laissant un anneau sur les parois du verre. Arôme de Brett, pomme fraîche, pelure de pomme, cuir. Goût de Brett, pomme mûre, légère amertume, pelure de pomme, sec. Carbonatation très élevée, corps moyen.
