Nel rispetto delle rigorose regole dettate dall’International Trappist Association, di cui l’Abbazia delle Tre fontane fa parte dal 2014, la birra viene prodotta sotto la severa supervisione dei monaci ed i profitti utilizzati esclusivamente per garantire il sostentamento della comunità, per opere di carità e per preservare il patrimonio storico culturale del complesso abbaziale. Complesso che affonda le sue radici fino al lontano 67 d.C. anno che vide in questi luoghi il martirio dell’Apostolo S.Paolo.

0,33 bottle purchased at the Monastery together with luttonm, consumed in Kosovo. Pours a a cloudy dark golden color, huge white foam with decent retention. Nose: an absolute blast of eucalyptus which goes ok with the tripel style. A hidden note of spicy yeast and some jasmine as well. Mouth: I am under the feeling that something has changed since I have drunk it the first time over a year ago. It is more refined, for sure: medium carbonation, confusing bitterness (the leafs infusion might have caused this rough feel), far from being my cup of tea.

Bottle from tderoeck. Many thanks! Golden colour, a lot of white foam. Medium carbonation. Nose of herbal sweets. Very sweet nose of eucalyptus. Taste of cough syrup. Bitter finish. Unbalanced. Interesting but not my cup of tea.

Little hazy orange beer, creamy irregular off-white head, pretty stable, bit adhesive. Aroma: very herbal, some banana, candy. MF: lots of carbon, medium body. Taste: sweet sugary start, spicy, herbal, yeast, banana. Aftertaste: minty, sugary, sweet, herbal, yeast, spicy, sightly bitter, banana.

The newest trappist beer, officially called Tre Fontane Tripel Birra Trappista Italiana since it received formal recognition as a trappist ale last month; got to taste this thanks to the efforts of Kevin De Rouck, who runs the Cultuurcafé in Berlare. Thick, dense and creamy, regularly structured, snow white head over a misty peach blonde robe, muddy with deposit. Aroma has a lot of eucalyptus indeed, a shrub cultivated by these monks since the 19th century; apart from this, I get hints of banana, apricot, white bread, mint, cinnamon, bitter honey, vanilla sugar and a whiff of grass. Sweetish, soft fruity onset, pineapple, banana and red apple, soft carbonation, ’fluffy’ and filling body, honeyish and bready malt sweetness, bit yeasty in the finish especially after adding the deposit, hint of ’deep’ leafy hop bitterishness with strong retronasal ’ethereal’ eucalyptus effect, also manifesting itself as a somewhat resinous, even slightly astringent feeling in the finish, adding spicy bitterness to the whole. Spice tripel in the Belgian tradition (not quite unlike Kempisch Vuur Tripel or even De Graal Gember), very decent and technically correct, but in order to become as great as the classic Belgian trappists, it needs a bit more subtlety and balance. Too generous in the spice (eucalyptus) department for my personal taste, but still on a very solid basis. Interesting.
