From the humble beginnings of our story in 2007, when Once Upon a Tree was born in the cold outbuildings at Dragon Orchard; we have evolved to multi award-winning craft drinks producer, BBC Radio 4 Food & Farming "Drinks Producer of the Year", Overall Champion Trophy at the International Cider & Perry Competition, and winner of the Bath & West Champion Perry Trophy.

We remain humble and true to our heritage and passion, which is to create the best quality cider from the highest quality fruit; whilst continuing to preserve the tradition of cider making in the area. Founder and wine maker Simon's appetite and knowledge to apply wine making principles to cider production has led to a profusion of creative and innovative products, from multi award winning Blenheim Superb ice cider, to grape skin co-ferments.

Lekker na zo’n uien IPA. Peer, appel, mossig, complex, wilde zure bite, droog, tannines. Knap spul. Goed doordrinkbaar maar stevig droog en complex.

26/3/2021. Bottle sample courtesy of danlo, cheers Ed. Pours clear pink bronze with a short lasting white head. Aroma is funky, apply, touch woody, tannic, grape and caramel. Moderate sweetness and light bitterness/tartness. Medium body, fizzy carbonation. Drying leathery finish. Good.

Clear golden juice. Soft and smushy light sweet apples, wonderfully soft feel. There’s a very fine vinagrous tartness behind a smooth wall of vanillaesque applesauce, combined with some dry woody tannins & a supple mouthfeel. A really nice and easy cider.

750ml wired cork bottle from Cat in the Glass. Opened with aloud pop. Sparkling, reddish amber colour, fizzy foamy white head that rapifly dissipates to a thin rim and aroma of fruity floral apple, grape skins, burnt caramel. Taste is tangy, apple, tart, fleshy, fruity, grapey, with alittle solventy funk, a brown sugar & caramel note, and some bittersweet tannin. Medium bodied, spritzy carbonation, medium-dry finish. Nicely drinkable.

75cl bottle from Scrattings, shared with Soph after a 54 mile ride around Bucknell and the ancient woodland of the Earl of Mortimer. Clear gold appearance, vague spritz. Aroma is floral, light schloer sweetness. Taste presents soft apple fruit, light floral elderflower, citrus with an oily palate and gentle acidity. Quite dry overall. Flavours are all quite subtle and delicate, and lacks a bit of punch.

Bottle from Ludlow Food Centre. Appearance - golden with medium carbonation. Nose - ripe and lightly bruised apple. Pickled onion funky edge. Taste - just uncomplicated ripe apples. Palate - medium bodied, tangy middle, dry, tangy finish. Overall - good.

Bottle from Ludlow Food Centre. Appearance - golden orange, initially car carbonation and then it falls away quickly. Nose - fresh but possibly bruised apple. Some apple skin. Taste - ripe and bruised apple again. Palate - medium bodied and tangy. Sweet but good acid. Overall - good.

75cl bottle shared with Soph. Misty golden copper colour, still. Aroma is softly fruity, lightly woody. Taste presents a fairly bog standard still cider. Expected a little more depth of flavour and fruit tangents given its presentation, very little tannin, but it's juicy enough, light and super easy-drinking with some fleeting floral moments. Ok, but not worth the price.
