Description
Pepingen, een prachtige kleine gemeente tussen Halle en Gooik, ligt tussen de glooiende heuvels van ons Pajottenland. Het is opgenomen in het boek ‘De mooiste plekken om gelukkig te zijn in Vlaanderen’ en dat is zeker niet toevallig.
Een hoeve-stokerij? Jawel, we zijn terug naar de oorsprong van het distilleren gegaan door te kiezen voor een oude fruithoeve. En dat doen we niet zomaar, het is grotendeels met de grondstoffen die we zelf telen dat we verder gaan in ons proces. Echte grondstoffen zoals appels, mais, aardappels, tarwe, gerst, …

Hazy dark red, no head. Aroma has lots of almond, cherry jam, fruit cake, cherry pit, balsamic vinegar, ripe raspberries. Taste has sour cherry & raspberry, funky balsamic vinegar in an almondy, jam-like malt body. Intense cherry pit & skin in the finish, lots of retronasal almond hinting at frangipane and dough. Medium body, oily texture, flat carbonation. This is simply delightful!

Bottle. Color: Lightly hazy orangish golden, white head. Aroma: Fruity blue plum, some funk. Taste: Fruity plum, some plum skin, oak wood and wild yeast funk. Over moderate tartness. Medium body, below average carbonation.

Aged sample Faint transparant rim over hazy orange-golden beer. Shoepolish, hazy, horseblanket, peach. Seriously sour. Again shoepolis, horseblanket, farmyard, barn straw. Again rather peach than apple, yet... bit cidery, as from crabapples. Undercarbonated. Light body with acidthinning. Original. How in the world didn't I hear earlier from this brewer?/blender. And guys, bottled 19|20, and BBd given for 2023? Seriously, a lambic beer that would keep only 2 years. Well, the proof is in the pudding.

Pours a bit unclear blonde. Small white head. Scent is full, paky, fruity funk. I would think more about calvados than whisky here. Taste is full, nice maltyness, balanced acidity. Funky wood, zgain very fruity , apples come to mind. whisky isnt recognizable to me. Great acidic balance and complexity, slightly to high carbonation perhaps. Quite enjoying this one !

Bottle shared with Thijs. Slight gusher. Hazy light golden with short lasting head. Sweet lemon, wheat, light funk, oft whisky, bread crust, toffee, loght nuts. Medium sweet and sour. Over medium bodied. Not a typical geuze, but it's quite nice.

Draft at Grote Dorst. It pours clear golden - blonde with a bubbly white head. The aroma is tangy fruity whisky character, boozey warmth, raisin, sultana, fruit cake, whisky fudge, toffee, toasty brown sugars, light funk and sweat. The taste is sweeter upfront than expected, whisky is right up there, raisin, sultana, toffee, fruit cake, creme brulé, custard, then there is a slap of acidity, puckering, lemon - lime, sherbet, white wine, gooseberry, oily and slick finale. Medium body and slick mouth feel. Love the combo here. I'm impressed it works.

Draft at Grote Dorst. It pours pretty clear muted golden with a bubbly white cap. The aroma is toasty grains, damp, musty, kitty litter, play dough, bready, here is some fruit, gooseberry and white currant. The taste is firmly dry, quite bracing acidity, enamel rip, puckering, gooseberry, sour white grape, sea buckthorn, tannin, musty, damp oak, deep funk and some chalky minerality. Medium body, flat and slick. Quite sharp up against the others we had in the lineup. A prickly unblended fella.

Aroma has musty leather and gentle low-level funk. Flavour is bracingly acidic, with light leather and hay. Flat, of course, and not particularly invigorating. Meh.
