We are dually focused on barrel-aged mixed-fermented beers and fresh hoppy ales. Founded on our shared passions for brewing science, delicious flavors, and the craft of beer production, we brew beers that are balanced, drinkable, and highly aromatic without tongue-scraping bitterness or piercing sourness. Beer should be a pleasure to savor, not a challenge to conquer!

16oz can from Tavour, another maxed out IPA from Sapwood. Hazy orange golden pour, initial towering, fluffy head subsides to persistent one finger cap, clumpy lacing, sediment at the bottom. Citrusy aroma, oranges and grapefruit peel. Taste is orange pith, grapefruit zest, juicy with a big hit of ABV at the end. Another home run!

Pours hazy yellow with a huge blooming white head. Enormous aroma of hops as soon as the pour begins. Taste has an overload of citra hops, pine, orange, lemon, hop oils. Palate is a bit sticky, lingering hop oils that remain on the nose. Good.

16 oz. can. Aroma shows me herbs with bread like malt and subtle grapefruit. Flavor follows with herb, and thankfully low pine. I get a good amount of herbal Ness with mild citrus fruits throughout the flavor. Thankfully, I don’t really find pine resin. Pretty well balanced between fruit and herb.

16oz can is pulp, frothy white head. Nose is solid and belies the heft beneath. Green Hoppy, grassy nose, citrus, raw tropicals, some wheat. Bright. Nearing dank. Flavor has more of the sweet stuff, tropicals go ala mode now, canned peaches, citrus is more curd. Full bodied and the heft arrives, some bitterness and booze.

Aromas are malt, citrus, stone fruit and melon with a hint of sulfur. Flavors are similar to nose with citrus coming out and adding in some resin. Slightly on the sweet side with enough bitter and good carbonation to balance. Good drinking.

16 oz. can. Aroma is a nice level of vanilla that is stronger than coconut. In the flavor both adjuncts are alive and well. They are also married together well. Also just a hint of bitter chocolate in the finish for balance. Slick/ oily texture in a full body. Hidden ABV. Excellent.

Can (12/19/25) shared by CLW--thanks, Chris! Opaque black, nice viscosity, no head or lacing. Aroma is strong balanced coconut and vanilla. Taste is very strong coconut and vanilla with background hint of chocolate. Smooth, thick texture, full bodied, soft carbonation and finish as taste. Really nice.

16 oz can. Aroma is chocolate, roasted malts, oats. Flavor has a solid amount going on considering the gravity. Roasted malt backbone that gives off chocolate nuances. Oats provide a lot to the body. Fuller chewy body. Just a touch of bitterness for balance. Overall very solid.
