Welcome To Sapwood Cellars

We are dually focused on barrel-aged mixed-fermented beers and fresh hoppy ales. Founded on our shared passions for brewing science, delicious flavors, and the craft of beer production, we brew beers that are balanced, drinkable, and highly aromatic without tongue-scraping bitterness or piercing sourness. Beer should be a pleasure to savor, not a challenge to conquer!

16oz can. At the February DCBeer share. Poured a hazy golden color with a small white head. Aroma was big floral notes, juicy. This was really crushable, resin, with really nice hoppy character. Pretty smooth.

Canned 9/16/25, drunk 2/3/26, as pictured.
Lush, rich, not-overroasted coffee and malt in the nose show a good deal of dark chocolate, light fudge, moderate fruitiness and is backed by rich malts with moderate roast. No alcohol, no green pepper.
Rich and malty, with a big chew to it, and a hint of syrup, but great attenuation, softness, stickiness and without any gross, over-roasted or green pepper-laden coffee. Reminds me almost exactly of Trillium's PM Dawn with Barrington Natural / Supernatural coffee. Same fruity, soft, round, earthy character with lush malt and yet a good balance. Incredibly, incredibly drinkable stuff for its size.

Aromas are dark malt, toast, cocoa and a bit of wheat. Flavors are similar to nose with great balance between bitter, sweet and carbonation. Body is maybe a touch thin for the style. Finish follows flavors and overall is really good.

Certainly smells like the real deal, which is nice if that's exactly what you want. I was hoping it was a bit more beery, but I can't fault them for making it come off exactly as pink lemonade. Unfortunately, it smells just a bit more sugary than I'd prefer, but it's not egregious, and there's no punchy acidity. The lemon part is lovely, too. Bright and authentic.
Sweet, rather thick of texture, though not syrupy/sugary. Fruit flavors are lovely, and there's no excessive acidity. I do like the comforting sweetness and rich, soft texture. As a more dessert-like drink, it works really well. Wish there were a bit more raspberry fruitiness and acidity, but it's also 6 months old, so I'm not holding it against them.

Can (11/25/25) shared by CLW--thanks, Chris! Deeply hazy dark yellow, thin head fading to a ring, light lacing. Aroma is grapefruit, citrus, rye and white grape, mild herb. Taste is strong white grape, rye and citrus/grapefruit, hint of herb. Smooth, creamy, frothy texture, medium bodied, soft carbonation, finish as taste. Good strength and nice complexity though.

16 oz can. Aroma is bold passionfruit, white grape, and peach. 🍑 Flavor is a bolder version of the aroma. Wow! Popping with fruit. Lots of lingering white grape and passionfruit. Extremely juicy character with almost no bitterness. LOVE this!!

16 oz can. Soft carbonation level. Aroma is soft amounts of citrus, herb and roasted grain. The flavor as bolder citrus then the pine. No resin. The mouthfeel is smooth and inviting. Bitterness is mild with soft citrus and roasted malt This is awesome. Top in the black IPA style for my tastes.

Can (10/28/25) shared by CLW--thanks, Chris! Opaque dark brown, thin head fading to a ring, light lacing. Aroma is dry, earthy malt, grapefruit and pine. Taste is earthy malt, pine, mild grapefruit. Smooth, frothy texture, soft carbonation, finish as taste. All the elements are here but I like a sharper contrast between the sweet, caramel malt and a biting piney bite. Still enjoyable as I love just about anything in the (rare) style!

16 oz can. Aroma is bold sugar and cinnamon. Flavor has a good amount going on. Soft cinnamon, vanilla, sugar and a strong bitter coffee element. Good body with a sticky texture. Good but very rich.

Can shared by CLW--thanks, Chris! Opaque black, nice viscosity, thick ring of head, trace lacing. Aroma is chocolate, strong cinnamon, vanilla and sugary frosting (sticky bun), late coffee, vague dark fruit. Taste is mellow, more-sweet-than-bitter coffee, sugar, caramel, vanilla over cinnamon. Smooth, creamy texture, soft carbonation, finish as taste with later lingering bitterness. Gotta let this breathe a little bit, but worth it. Good complexity and strength.
