Welcome To Sapwood Cellars

We are dually focused on barrel-aged mixed-fermented beers and fresh hoppy ales. Founded on our shared passions for brewing science, delicious flavors, and the craft of beer production, we brew beers that are balanced, drinkable, and highly aromatic without tongue-scraping bitterness or piercing sourness. Beer should be a pleasure to savor, not a challenge to conquer!

Pours a bright hazy yellow / gold with thin off white head that dies out fast. The aroma is bready malt and yeast. Very soft milled grain. Muted fruit. Medium body, toasted malt, light bitterness, dry finish, good for the style.

16 oz can. Poured into a footed Pilsner glass.
Aroma has mild Lawn clippings with soft lemon. Flavor falls with a very mild mineral characteristic through the body. Decent Pilsner malt, supporting the hops.
Lighter body with a crisp, dry texture with a lightly lingering lemon character. Very refreshing and clean. Awesome summer pilsner!

Really even, mild, aromatic but still spunky with no overdone adjunct. I wouldn't necessarily pick it out, but it's there, intensifying the floral and citrusy elements of the hops used. I'd guess there's some Motueka here, and maybe Citra and/or Amarillo. Nothing heavy, nothing resinous, but a strong fruit salad with a dollop of pine oil from the Motueka, with light mineral and light white grape lingering. Fluffy, delicate, gently balancing, honey-like malts.
Citrus-forward, but not dominant. Though there's less Motueka-like character than there was in the nose. Malt is deep but well-attenuated. Lingering floral, citrus juice and mild bitterness helps keep it mostly balanced. Could stand a bit more bitterness, but it's over 3 months old, so I'm giving it a pass there. I think I preferred the berry dryness and acidity of the Krush from Cheater Hops 32 more than I like the overall citrusy fruit salad of this, but this is by no means a slouch.

Didn't realize this was already old when I bought it, but it doesn't smell worse for the wear. Nice and rounded at this point without any of the intense floral acidity of the Krush or pine of the Motueka. Just an easygoing berry-forward fruit salad with a touch of spice/spruce. Malts seem ample, yet nothing sweet, with a bit of biscuit/white bread. Clean, no alcohol or resin.
Wow, those come together really nicely! The guava and pear fruit salad of the Motueka gets a bit bolder and drier from the berry skin acidity of the Krush. Rich malts show white bread and honey but there's plentiful acidity to balance. Lingering lemon, guava, white wine, passion fruit and gooseberry. Interesting, complex, flavorful and unique. Love these guys!

16oz can from Tavour. Hazy golden pour, persiStent thin layer of tight white foam. Citrusy aroma with an emphasis on grapefruit. Thick , creamy mouthfeel, zesty grapefruit. Not getting that much dank notes.

16 oz can. Aroma is lemon on top of a bold lime character. Both citrus fruits followed into the flavor with a mild lingering agave after the sip. Tequila notes after the sip. It tastes like a very nice mimic of a citrus margarita without tequila harshness.
I am still continually amazed with how well this brewery does with a large range of beer styles.
