We are dually focused on barrel-aged mixed-fermented beers and fresh hoppy ales. Founded on our shared passions for brewing science, delicious flavors, and the craft of beer production, we brew beers that are balanced, drinkable, and highly aromatic without tongue-scraping bitterness or piercing sourness. Draft at Sapwood Cellars. Hazy golden pour, thin layer of wispy foam. Initial fruity aroma. Taste brings notes of citrus, unexpected for a rye IPA. Oat whip feel also. Not much rye detected ..

Half pour at Sapwood taproom. Hazy yellow pour, bubbly ring. Faint fruity, citrusy aroma. Taste takes a zesty turn, light citrus peel, lemon, lime. Drinks like a session IPA.

50cl btl pours a leggy, near opaque brown, khaki head. Witchhazel, malt, booze, barrel, caramel nose. Dates and savory herbs. Boozy in the mouth, malt, caramel, herbs, schnapps, soap here. Full, sticky, boozy finish.

Can shared by Joe, thanks! Pours a near clear yellow gold with a white head that dissipates to the edges. Aroma has a bright citrus and grass with a bit of light flora and some sweet grains underlying. Flavor has bright citrus with a light onion with some sweet grains and a touch of grass in the finish.

Bottle shared by Joe, thanks! Pours a clear rosey peach with a white head that dissipates quickly to the edges. Aroma has sour cherry with light oak and a bit of straw underlying. Flavor has strong sour cherry with a bit of oak and a light grain backbone.

Can (9/16/25) from Untappd box. Opaque, inky black, nice viscosity, no lacing. Aroma is strong, bittersweet coffee, slight char, dark chocolate, vanilla, hint of coconut and dark cherry. As lazy as this sounds, taste follows aroma. Smooth, silky texture, soft carbonation, no sign of alcohol, finish as taste. WOW! Great strength, but amazing the complexity and balance.
