Welcome To Sapwood Cellars

We are dually focused on barrel-aged mixed-fermented beers and fresh hoppy ales. Founded on our shared passions for brewing science, delicious flavors, and the craft of beer production, we brew beers that are balanced, drinkable, and highly aromatic without tongue-scraping bitterness or piercing sourness. Beer should be a pleasure to savor, not a challenge to conquer!

16oz can from Tavour. Hazy golden pour, small but sturdy white foamy head. Hoppy aroma, fruity. Taste is hoppy, citrus, pine. Zesty, tangy with a dry finish.

Canned 12/9/25, drunk 1/17/26, as pictured.
Nose is lovely vanilla bean, giving a rich, savory, and lightly sweet notion, alongside floral and oily orange zest. Some hop acidity on the end, but it can be tough to differentiate from the orange zest. It's all clean and well-presented with no excess sugar, alcohol, resin, etc...
Excellent bitterness up front from the zest sets the mood as you know right away this won't be sweet, syrupy, etc...Still some juiciness and plenty of softness and richness from vanilla bean. Floral and lightly spicy hops with citrus, citrus and more citrus. Nice and dry on the finish, yet the body is ample throughout. Don't miss the lactose a bit, though I'm wondering if orange zest is necessary as it is redundant with hops and just adds a more harsh bitterness.

16 oz. can. Aroma has light spice, toffee, bread crust. Flavor is toffee with a bready malt backbone. Mild spice. Very soft herbal bitterness for balance. Crisp, dry texture. Quite good.

Canned 7/22/25, drunk 1/16/26, as pictured.
Rich malt shows loads of honey-like character. Soft, floral and mildly herbal hops behind it are clean and add good balance without going overboard. Exceptionally clean with minor mineral.
Very, very malty. Rich, long honey and sourdough with a bit of strong toast undercurrent. Lingering bitter herbs and strong pepper. Almost a syrupy caramel corn character that detracts from the clean honey and fresh, floral/herbal hops, but otherwise well-done. Not too sweet despite the intense maltiness (though pushing it).

500 ml bottle. Aroma has notes of wood, berries, funk, vanilla, chocolate, raisin, amazingness. Pours opaque dark brown with a one finger beige head with good retention. Taste is moderately to highly sour (8/10), moderately bitter, and savory with flavors of dark fruit, wine barrel, bourbon barrel, and funk. Delicious and complex. What an interesting beer. This has completely changed my views on sour stouts/porters. This might be the first good one I’ve had.

Pils?  Nah.  Looks like a session hazy.  Smells like one too.  Nelson to the face.  Grassy and minty too.  No hint of continental pale ale.  Flavor follows.  Limey and grassy now.  I mean, its not bad, but its way past hoppy pils.  6 7 7 6 6.5

Bottle pour shared by CLW--thanks, Chris! Lightly hazy, pale red, ring of head, no lacing. Aroma is strong oak, tart-over-sweet raspberry. Taste is strongly tart raspberry (not quite sour), oak. Frothy texture, soft carbonation and finish as taste. Strong flavors of oak and tart/sweet raspberry. Avoids being sour but more tart than I would generally enjoy. Well crafted.

500 ml bottle. Aroma is bold oak barrel, rather bold raspberries, lactic acid. In the flavor the oak is sharp with some lactic acid. Raspberry is represented well throughout the sip. Not sweet at all. Mild sharp pucker in the glands. This is a true sour ale.

Bottle shared by CLW--thanks, Chris! Opaque, inky black with nice viscosity. Aroma is strong bourbon (evident from over a foot away), coconut, vanilla, chocolate, mild spice. Taste is strong, balanced, coconut, vanilla, bourbon, late chocolate and a pleasant spiciness (cinnamon?). Smooth, thick, silky texture, full bodied, finish as taste. Wonderful smoothness, complexity, balance and strength. Reminiscent of a Mounds bar. A true pleasure.
