We are dually focused on barrel-aged mixed-fermented beers and fresh hoppy ales. Founded on our shared passions for brewing science, delicious flavors, and the craft of beer production, we brew beers that are balanced, drinkable, and highly aromatic without tongue-scraping bitterness or piercing sourness. 16 oz can shared by tfontana. Thank you Soooo MUCH Tom! Aroma is a rich array of coffee. Mild berries, pitted fruit, and mild roast.
Flavor is rich and full of depth. Mild roast, fruity coffee with mild vanilla nuances. Pretty nice amounts Cocoa and chocolate. Alcohol is not found. How strong is this? Amazing!

16 oz can from the brewery. Cloudy yellow appearance. Aroma is stronger citrus, mango, and soft berries. This is a bold way to display a single hop in so many different forms. I love the Citra variation, now also love this variation. No massive pine or “danky” character. This is quite fruity and lovely!

Can (2/3/26) shared by CLW--thanks, Chris! Deeply hazy, bright yellow, ring of head, light lacing. Aroma is strong orange, melon, citrus, mild grapefruit. Taste is strong tangerine, melon, orchard fruit, candied citrus. Smooth, silky texture, soft carbonation and finish as taste. Thank you, Sapwood, for a whole new appreciation of M.O.S.A.I.C.! The most obvious Mosaic--grapefruit--is barely here! Wonderful!

16oz can from Tavour. Hazy golden pour with a persistent creamy white head. Aroma is citrus peel, floral, pine. Taste is an aromatic hoppy blend, citrus, piney, floral with a touch of dank thrown in for good measure. Creamy smooth with a gentle finish.

Pear and honey with mild black pepper and white bread. All good things! No big clove, no banana, and only minimal bubble gum. Mildy fruity, mildly herbal hops seem appropriate to let the yeast shine.
Soft and malty with pear, black pepper, dry melon and really no huge spiciness. Just an easygoing pepper. Excellent depth and attenuation with a gentle, honey-like sweetness. Clean and controlled fermentation character at lower temperatures producing an elegant Belgian beer. Frick yeah. So impressed with Sapwood.

Flavor has the prior noted lime with a lemon tone to a very good easy bread maltiness. Texture is lighter side of medium bodied with a mild lime pith finish. Nice brew!

Can shared by CLW--thanks, Chris! Lightly hazy, pale yellow, tons of sparkle, ring of head, trace lacing. Aroma is strong lime and vegetal with an interesting almost vanilla wafer sweetness. Taste follows aroma, with back half malt. Smooth, frothy texture, soft carbonation and finish as taste. Am really liking what Vista appears to have added here--will be on the lookout for this hop in the future!

16 oz. can. Aroma is soft bubblegum and mild herb. The yeast phenols in the flavor are soft. Light bubblegum, pear and mild malty backbone. Ends on soft herb. Decent.

Not going to knock your socks off but a nice change of pace.

Aromas are citrus, sweat, onion, malt and a hint of MJ. Flavors are similar to nose and just slightly more sweet than bitter with decent carbonation. Pretty good beer but nothing special.
