Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Poured from 500mL bottle. Lightly hazed bright amber reddish-orange with dissipating white head. Tried this directly after Portraits: Malvasia and decisively prefer this. Soft vinous must with mild tannins, semi-dry, nicely balanced.

Dull tan, no head. Hazy. Aroma is dryish, a little buggy, and has a really nice vinous character. On the palate, similar, but the grapes are punchier and the bugs are a little bit punchier.

500mL bottle, pours a hazy golden orange with a small white head. Aroma is dominated by the musty grape skins, rustic notes, and complex wild bugs. Flavour is complex, with lots of musty grape skins, complex bugginess, and a little oak. Real nice incorporation of the grapes into the wild yeast mix. Very good.

500mL bottle. Pours murky dully ruddy colour with a white colour. Nice tannic grape character with an earthy, spicy yeast character. Flavour has a great tannic grape character, earthy yeast character. Very nice.

500mL bottle. Pours hazy, dirty golden blonde with a white head. Great musty grape character and a spicy saison yeast character on the nose. Flavour has a solid spicy saison yeast, good grape must. Very rustic, buggy, and has an excellent musty vinous character throughout; well-integrated and complex. Great saison.

My first IPA from SARA and it smells great right from the pour. Earthiness, undertones of light pine and then a mild white grape with no herb. Moderate amounts of honey/white bread-like maltiness to easily balance. Clean with some earth/mineral and an all around rustic feel to it. Certainly not explosively hoppy or intensely aromatic, but it's also almost 2 months old at this point.
Earthy with maybe a hint of allium, or some such herbal-like character. Touch of pine, and a healthy bitterness. Nelson really not the best hop for longevity. Even at just over a month it really starts to go south, changing from its expressive and preferable white grape/white wine to a more bitter herbal character. And here at almost 2 months, it's just about all herbage. Still, you can tell the beer underneath is well-made. Good maltiness and attenuation.

Poured from a 750.ml bottle.
Aroma is fruity with nice blueberry and currant notes. Light citrus notes. Light herbal, phenolic notes. Faint oak and alcohol notes. Light malt notes. A bit of herbal, earthy funk.
Pours a nice purplish red with some orange hues on the edges with a medium sized, moderately thick, frothy, pink head that recedes quickly to the edges and disappears.
Flavor is somewhat acidic with a light sweetness and light grain notes. Moderate bitterness and alcohol notes. Nice currant and blueberry notes. Light earthy, herbal phenolic s and a light spicy, peppery phenolic note. Hints of citrus and faint oak.
Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth.
Overall, a solid fruity saison. A bit acidic but not too much so. Great fruity, berry notes. A bit of SARA funk and oak notes. I remembered this being more acidic, but this bottle isn't bad at all.

Tap at Drinkøteka. Lightly hazy golden body, off-white head. Lovely resinous aroma, with light orange peel and stone fruit touches. Smooth, lean taste, dry, more resin, more lemon and vague tangerine, herbal, fresh, well balanced. Lower bitterness than some, but enough. Simply - tasty AF! Even lightly juicy! Excellent!
