Description
Het Pajottenland, de streek ten zuidwesten van Brussel, is samen met de Zennevallei, waarin Brussel deels ligt, de geboorteplaats van de lambik. Op zijn hoogtepunt waren er honderden lambikbrouwerijen en geuzestekers verspreid over deze regio. Op heden zijn er minder dan 20 actieve brouwerijen of stekers meer over.

Brouwerij Goossens was tot 1967 een van de vele aanwezige brouwerijen in Dilbeek en omgeving, waarvan de eerste bronnen teruggaan tot 1767. Verschillende van de huidige gebouwen staan op de Ferraris kaarten van de lage landen. Na bijna 25 jaren leegstand werden de gebouwen overgekocht van de familie Goossens door Frans Appelmans en Yvette Mary, die begonnen aan een stevige renovatie. Op een boogscheut van deze prachtige site kan je verschillende voormalige brouwerijen terugvinden, zoals Brouwerij De Neve, Eylenbosch en het Spanuit.

In 2016 wordt de volledige site aangekocht door de familie Kestemont, geboren en getogen Pajotten. Drie jaren later wordt er begonnen met lambik te steken op eiken vaten. In 2021 wordt er een brouwzaal ingericht om de eerste brouwsels zelfgebrouwen lambik te maken. Na een halve eeuw afwezigheid kunnen we opnieuw de geur van afkoelende wort in de straten van Pede ruiken en zo een deel streekgeschiedenis in ere herstellen. Vast wat Brueghel rook tijdens het schilderen van de oude molen en kapel van Pede zo'n 400 jaar geleden, op wandelafstand van de brouwerij.

Draught (3 jaar) @ Stigbergets Fot Pours hazy deep golden with no head. Aroma is tart with notes of funk, malt, barnyard and hint of citrus. Taste is medium sweet and light bitter with a flat tart and funky finish. Body is light to medium, texture is thin to oily, carbonation is flat. I think the taste would be elevated with some carbonation

Just yellowish, fairly persistent head over very lively carbonated orangey golden beer. Citruspeel, orange, kumquat, biological cleaning products, bit of coriander, very complex nose. Same in the taste. There's a known spice there I can't name. Bit shoepolish, saddlesoap, farmyard, bit of solvent. And the citrus/orange, of course. Very well carbonated, acidburn and -thinning. Bit slick in the finish, as the oils from orangepeel. Pretty complex, intriguing beer.

On tap at Stigbergets Fot. 3 years old. It's flat, headless and golden, almost clear. Lovely fruity, funky aroma with lemon, barnyard, some leather. Gooseberry, bread and a hint of vinegar. It's medium bodied and flat on the palate, feeling lightly oxidized. Tart, with some lemony funk, barnyard, leather, vinegar and hay. Fruity. Lasting funky, malty finish. Love the aroma, but the flavor is a bit dull. Guess some carbonation would have done good. 240721

375ml bottle. Buttery vnailla nose, blue cheese, oak, grapefruit. Orange-amber, almost flat. Very creamy blue cheese flavor, vanilla, grapefruit, leather. Low acidity. A very strange one, tons of funky cheese and almost seems like diacetyl. Not bad, but not what I want in a gueze.

Keg (2yo lambik) at Stigbergets Fot, Stockholm. Pours unclear golden to amber, minmal head. Aroma: citric, funk, sour apple, hay. Taste: shaap, citric, green apple, lemon, funk, leather. Medium body with low carbonation. 2yo lambik never tastes ready to go!

Clear yellow beer, small creamy white head, unstable, non adhesive. Aroma: very funky, earthy, lots of brett, not smelling the rhubarb. MF: ok carbon, medium body. Taste: good acidity, funky, a little bitter, lots of brett, nice. Aftertaste: dry, sourish, funky, nice, a bit earthy, still not getting any rhubarb though, which is a shame. Tilquin and Cantillon have done a way better job at making rhubarb lambic, even small first time producers like Vermeersch and Boerenerf had a much better first take on this new lambic style.

375mL bottle, pours a hazy bright golden with a tiny white head. Aroma reveals ascorbic green grape, gentle barnyard funk, and light acidity. Flavour is somewhat citric, some underripe green grapes, and light funk. Very understated green grape, with subdued funk. Nicely done but shy of exquisite.

Bottle. Bit hazy deep golden. Tons of orange, funk, wheat, zesty, soft vanilla. Medium sweet and sour. Solid medium bodied with lively carbonation. Not very complex, but the orange works great here, well done!
