Description
Brouwerij De Schieve werd in 2012 boven de doopvont gehouden. De opening van het cafe vond plaats in 2013, de brouwerij in Olmen zag het licht begin 2014. Een uitgebreid terras en een dito parking konden ook niet ontbreken. De brouwerij is opgevat als een hobby. Inge en Frank hebben beiden een voltijdse baan, die ze combineren met het brouwen en bottelen. Alle bieren worden trouwens binnen de muren van De Schieve gebrouwen en gebotteld.

In 2018 zijn we begonnen met De Schieve Rockbrewed. Al duizenden jaren wordt er bier gebrouwen in Europa. Uiteraard werd vroeger het bier niet in sjieke inox of koperen ketels gebrouwen, maar in houten tonnen. Dit houdt natuurlijk in dat je deze tonnen niet zomaar op een houten vuur kan zetten om te maischen en te koken. De techniek die gebruikt werd bestond er in dat een vuur gebouwd werd om hete kasseien, rotsen te verwarmen tot 800 graden. Deze rotsen werden dan op regelmatige basis toegevoegd aan het bier, om zo de temperatuur van het bier te laten stijgen en te laten koken.

Op het einde van het brouwproces werden de rotsen uit het bier gehaald en was het bier klaar om te gisten, steriel en afgekoeld. Brouwerij de Schieve wil deze authentieke manier van brouwen herwaarderen. Resultaat is een bier met een lichte carameltoets die ontstaat doordat de suikers op de hete kasseien neerslaan en verbranden, en een vleugje houtaroma. Voor het vuur worden immers eik of beuken blokken gebruikt

Variation on De Schieve Tripel (though not entirely the same recipe) brewed the Steinbier way, so with hot stones lowered into the brewing kettle, an ancient German method De Schieve advertized during last weekend's ZBF edition and showed off at their booth by means of a video playing. Membrane-lacing, egg-white, creamy, dense, closed head, hazy apricot blonde robe. Aroma of halfripe banana, white bread, a dash of DMS (overcooked cauliflower), plaster, turnip, cold French fries, pear and minerals, the latter possibly referring to the hot stones? Sweetish onset, some banana, pineapple, pear, light sourish note, medium carb, doughy and white-bready malt body with a sourish undertone; florally and grassy hop bitterish finish with ongoing malt and ester sweetness, the DMS returning retronasally and late minerally accents, which may or may not be the result of the Steinbier element. Soft bitterishness but not nearly the hoppiness the brewer promised; the DMS should not have been here either and the subtle minerally accents added by Steinbier in a clean and lower strength German lager, as would traditionally be the case, get a bit lost in this tripel-like environment - De Schieve has failed to convince me that applying the Steinbier method to Belgian ales is a good idea, though I can somehow appreciate the initiative.

Clear golden color, medium to full sized white head. Smell and taste malts, quite yeasty, a bit sweet, some herbs or spices in there. In every aspect a quite standard Tripel. Or, at least, it has all the flavors a lot of tripels (and you could add "strong pale Belgian Ales" just as well) have imo. Nothing wrong with that, but not really what I like. Decent beer though.

Clear dark brown with a lasting, thin, frothy, tan head. Aroma of caramel, cookie dough, cinnamon, plum, candied orange, green tea, weirdly Coca-Cola even, faint iron, cough syrup. Taste is medium to heavy caramelly sweet, a bit fruity, notes of plum & dough, managing to not become cloying thanks to a medium herbal bitterness, tea-like & faintly nutty. Dryish, bit herbal hoppy finish but not outspoken, lingering nuts, caramel & spice. Medium body, slick/syrupy texture, fizzy carbonation. Not good enough; this can't stand the test of 'craft' next to all these other brews.

Bottle @ home. Red-brown color with a decent sized off-white to beige head. Smell and taste malts, herbs or spices, sweetish, I get cinnamon quite heavily at least thats what it reminds me of. Decent body and carbonation. Meh not my kind of beer.

Thanks to Kraddel! 330 ml. bottle sampled. Dark amber orange, clearly lacking carbonation. Nose is massive sweet cloying BE banana syrup, pure sugar, syrupy,…. Taste is flat seemingly under fermented diluted sugar, candy watery with fish guts, dark sugar water, fish guts, lacking almost fermentation, carbonation. As poor as this is, it is quite a bit better than the other 2 beers I tried from this brewery. Yeah….

Pours rather unclear brown with a red glow. Small white head. smells like sunscreen... WTF ? Taste is sweet, mild caramel, bit metallic. mild bitterness. Weak beer overall, but by far the best of 3 i've had so far by them.

Bottle at Modeste 2017. Cotton label like YOLO. Pours unclear blonde, small white head. SMell is not very intense, but plastic all over. Taste is plastic, rather bitter. the bitterness hides some of the negativity in the beer, that came out more intensely in the tripel. One might say this is 'better' but I don't believe trying to hide brewing errors behind more hops is a true skill that should be complimented. These 2 beers were not in shape to bring to a beerfestival, or to ever be sold in the first place.

Bottle at Modeste 2017. Bottled in a 75 cl, with an inox label - YOLO style. I popped the question why. 'it's unique'. I popped the price-question, which was about 7 euro's per 75 cl bottle with the inox label included....Pours unclear blonde, small white head. Smell is spiced, very plastic-forward. Mild cheesy. taste is super cheesy, plastic. Not OK at all. probably fermented way to warm, or yeast was stressed, as well as they seem to have added to old hops ( cheesy ) . It's a fear that came true - more attention seems to have gotten to the label, than the actual beer's quality.

Thanks! Sampled draft @ Modeste 2017. So we tried the tripel first & the aftertaste there was straight up something like nail polish remover but it still had some other elements this one is all that. Orange, uneven soapy white head. Nose is really awful all chemical, rotting, medicinal, nail polish remover. Taste is just insane medicinal, nail polish remover, solvent, hospital equipment,…. Seriously godawful & the taste lingers. Rare abomination with basically no redeeming qualities.
