Most of it consists of adapted, salvaged or second-hand equipment. Since July 1, 2007, they have been renovating an old barn and stable in the village of Revermont Jura, La Ferté. They started brewing there in June 2008 with the aim of increasing production to a livable level, ie 300 hl per year or 3,500 bottles to be marketed per month.

Bottle. Color: Slightly hazy golden, thin white head. A lot of tiny carbonation bubbels coming up from the bottom of the glass. Aroma: Complex, a lot of oak wood, some furniture polish, a little tartness and fruity grape. Taste: Some light to moderate tartness, wine-vinegar hints, a lot of oak wood, vanilla, also moderate sweetness. Sweetness wins over the tartness overall. Furniture polish, getting less pronounced when standing longer. Liquor-like boozy hints. Malty with a hoppy background. Medium body, below average carbonation. Dry finish. Complex. Hard to describe all flavors. Very interesting.

Poured from a 750 ml bottle. Aroma is Brett forward with lots of fruity notes. Some light cherry notes with some bright stone fruit, lemon lime, grapes and tropical fruit. Light grain notes and light alcohol notes. Pours a slightly hazy, golden color with a medium sized, thick, pillowy, white head that recedes to a small film that lingers. Light lacing and faint legs. Flavor is slightly sweet upfront with light grain notes and a touch of acidity. Medium bitterness and light alcohol notes. Fairly fruity with lemon lime, cherry and grapes. A bit of stone fruit and a touch of a plastic note. Light peppery phenolic notes. Mouthfeel is medium light bodied with medium high carbonation. Low astringency and low alcohol warmth. Overall, a nice Brett saison, especially in the aroma. Super fruity fermentation characteristics, especially in the aroma. The flavor had a bit of an off Brett note, but not overly so.
