Burning Sky, a brewers dream. The dream of a long term brewer with a love of both punchy hop forward pales and of the beautiful Belgian beer tradition. A brewers brewery, we are fortunate to be blessed with a talented team.

Whilst industrial units are convenient, they seldom inspire, so we chose to locate ourselves within the beautiful and inspirational South Downs, occupying refurbished farm buildings in a slightly quirky village. A true farmhouse brewery.

Producing our first beer in the Autumn of 2013, we were rewarded far beyond our expectations – not just with a couple of orders but with Mark being voted ‘Brewer of the Year 2014’ by The Guild of British Beer Writers, and the brewery being named 4th Best New Brewery in the World 2014 by Ratebeer.

Whilst ambitious, we do not wish to grow out of, or beyond the buildings we occupy. Instead we are investing heavily in the areas that we wish to grow in. The first craft brewery in the UK to install oak foudres for ageing beers in, we have just (at the end of 2016), completed the restoration of a Grade 2 listed building to expand upon this and our barrel ageing program. The beginning of 2017 saw us install a bespoke coolship in this space – a traditional vessel used for cooling hot wort. We will be using this to produce spontaneously fermented beers.

And all the while that this goes on, we continue to refine and pay particular attention to our core beers, making sure that we (and you), have something refreshing to relax and dream with at the end of the day.

Draft @ Brett Fest 2015. Aroma of sour milk and roasted malt. Taste has some bretty sour milk, roasted coffee and distant hops. Bit thin body. Solid.

Lukt: Syrlige frukter.
Utseende: Gyllen lys farge.
Skum/kullsyre: Dekkende skum, heng langs kant.
Smak: Frisk, syrlig, gress og gjær.

Draught @ Beer Temple, Amsterdam. Aroma has licorice and berry juice. Flavour has licorice, tartish berry juice and some minerals. Like a mixture of black ipa and oud bruin. Somewhat pleasant.

Nearly, but not quite, reddish-black beer with practically no head in the case of this particular bottle. Smell is thick, chocolatey malt. Flavour is similar, though there’s initially a bit of a sweet, fruity hit. This soon dissipates leaving the earthy chocolate flavour. It’s quite mellow overall but distinct enough and very rich and tasty.

Pale, slightly hazy yellow beer with a thin head. Smells tangy, with fruit and a grassiness to it. Flavour is initially quite mellow but that tanginess comes into it again, with a sort of bready, apple-y flavour kicking in. It’s very spicy and yeasty, almost like a sort of apple pudding.

Bottle from Cornelius. Dark brown body with a thin beige head. Faint lacing. Aroma of chocolate cake, vanilla, earth and Weetos. Flavour is dry and rich - notes of dark chocolate, fig and dirt. Thin to medium texture with a watery texture. Flat carbonation. A bit odd to be honest...

Bottle. Hop Hideout, Sheffield. Label States 6.5%. Gloopy pour. Clear, dark straw colour. Thick, fairly dense, shiny topped, lasting, white head. Nose has sour, bready yeast. Light, green apple. White grape. Cheesecloth. Taste is light sour. Quite dry. Palate is slick, bubbly, and tart, which feels a bit at odds. Finishes light tart, dry, and ends with a zesty, bitter close.

75cl bottle @ Chez Sophie, shared between three. Pours gold. Aroma is light funk. Taste presents a soft, hidden saison pillow with very light lemon and lambic notes. Bone-dry chardonnay influence. Have to say we all expected a bit more from this.

Fra fat på Bøker og Børst, Stavanger: lett uklar blekgul med kort skum. God krydret aroma og smak med innslag av farmhouse/stall og en viss fruktighet. Men ganske så besk etter hvert.

Earl Of Essex. Keg. Hazy amber beer, tidy pale cream colour head. Palate is light, dry and crispy. Minerals. Mildly tart cherry and citric peel, a little balsamic. A modest savoury vibe. Comes together well, quite a light Sour Red/Brown.
