Burning Sky, a brewers dream. The dream of a long term brewer with a love of both punchy hop forward pales and of the beautiful Belgian beer tradition. A brewers brewery, we are fortunate to be blessed with a talented team.
Whilst industrial units are convenient, they seldom inspire, so we chose to locate ourselves within the beautiful and inspirational South Downs, occupying refurbished farm buildings in a slightly quirky village. A true farmhouse brewery.
Producing our first beer in the Autumn of 2013, we were rewarded far beyond our expectations – not just with a couple of orders but with Mark being voted ‘Brewer of the Year 2014’ by The Guild of British Beer Writers, and the brewery being named 4th Best New Brewery in the World 2014 by Ratebeer.
Whilst ambitious, we do not wish to grow out of, or beyond the buildings we occupy. Instead we are investing heavily in the areas that we wish to grow in. The first craft brewery in the UK to install oak foudres for ageing beers in, we have just (at the end of 2016), completed the restoration of a Grade 2 listed building to expand upon this and our barrel ageing program. The beginning of 2017 saw us install a bespoke coolship in this space – a traditional vessel used for cooling hot wort. We will be using this to produce spontaneously fermented beers.
And all the while that this goes on, we continue to refine and pay particular attention to our core beers, making sure that we (and you), have something refreshing to relax and dream with at the end of the day.

Craft Clerkenwell 3rd Birthday Bash. Cask. Lightly hazy gold beer, small white head. Palate is light and a little dry. Fine carbonation. Very light malts provide very modest sweetness. Grapefruit bitterness and mild tropical fruits. Touch of hop spice. Light semi dry finish, with a mild bitter linger.

On tap at Brewdog Birmingham, pours a cloudy orange copper with a small white head. Nose brings out dry piney hops, dry crackery malt, and some floral hops. Flavour is extremely astringent and dry - really quite harsh - with lots of boozy notes, pine and crackery malt. Not very well-balanced. A bit difficult to drink. Still, decent stuff.

Draught @ The Rover. Pours cloudy milky pale yellow with a big frothy white head that slowly dissipates while leaving lots of sticky lacing on the glass. Smell is tiny fruity with crackers, lemon juice, hay, dry soil, white pepper corns, lemon zest and hints of yuzu juice. Taste is tiny sour, tiny bitter, tiny fruity and slightly phenolic with crackers, lemon juice, star fruit, dry soil, hay, lemon zest, orange zest, white pepper corns, bay leaves and lemon grass. Mouthfeel is crisp, dry, slightly tart and light bodied. Finish is tiny sour, tiny bitter, tiny fruity and tiny phenolic with crackers, hay, dry soil, white pepper corns, lemon juice and bay leaves. Refreshing!

Keg at the Cask, 16/06/14. Clear light golden with a moderate off white covering that stays for the show. Nose is juicy citrics, punchy hops, mango, orange sherbet, light streak of pineage. Taste comprises orange pith, grapefruit, melon, straw, lemon zest. Medium bodied, moderate carbonation, crisp refreshing hops in the close. Solid SIPA.

Keg at Craft Beer Co, Brighton. A dark golden/straw coloured pour with a medium white head on top. Hoppy, malty, citrus/tropical fruit aroma. Tastes similar, hoppy, malty, tropical fruit, pine. An elegant tasting complex IPA that I could drink all day. Very nice indeed.

Bottle from Beer Central, Sheffield. I was unaware there was such a thing as a white wine barrel aged version of this, but that’s what the label says, so that’s what I’m rating. Anyhow, it’s hazy, green tinged, straw coloured. Bright white, tight, lasting head. Yeast. Lime. Some vanilla. Some wood. Hint of grass. Taste is lemon tartness. Bone dry. Very bitter. Smooth, creamy palate. Dry, bitter, crunchy finish. Loads of taste.

Keg at CPK - London. Pours perfectly clear, yellow-gold with a creamy white head. Nice pithy citrus and generally stone notes in the aroma. Light sweet flavor with lots of dry, pithy citrus character , that foamy white stuff in an orange, some clean minerality, grapefruit, melon. Light bodied with average carbonation. Crisp, lean, short and clean on the finish with lingering pithy and rindy citrus, limestone, slight dried pine needles, more grapefruit, tangerine rind. Very clean and highly drinkable.

Cask: half-pint at the Pheasant, Wellington, Shropshire on 14th June 2014. Golden and clear body, on top a white covering of bubbles. Citrus notes from the start, this is heavily hopped with grapefruit notes leading the flavours throughout. Not my thing, but if you are into light beers with a citrus bent, then this is for you.
