We spent a year refitting the barn, and installing all the equipment ourselves, before selling our first pint in January 2015. In making our beer we aim to tread lightly on our surroundings. We generate much of our own power from a 15kw solar array; heating from a wood powered boiler and our spent grains keep the local livestock happy.
All the water used for brewing comes from our own spring source deep below the organically farmed land. The water is microfiltered and UV treated to ensure its purity without the need for chemicals. It’s delicious and great for brewing.
Five years on from launch, plenty of awards and some 2 million pints later, by 2020 we were a team of 9 and when we started moving fermenters outside, it was obvious that to keep moving forward, we were going to need a bigger boat. We couldn’t expand in our current building, and really didn’t want to move away from the spring water and the farm. Both of which are part of our DNA. So we looked into the idea of actually building Brewery 2.0 from scratch here.
In August 2020 we were granted planning permission and began building in September. All being well, we hope to move in December 2021.

Keg at the craft beer Co Clerkenwell. A translucent golden orange with a lasting. G sticky white head. Aroma is sweet farty socks, orange rind, faint. Peach, sweaty. Flavour is composed of sticky hop, grassy, little hoppy dill. Not the best. Sorachi beer I’ve have.. Palate is medium. Sweet sticky highish woody grainy.,

Can at home. It pours hazy orange - amber with a thick white head. The aroma is soft, sweet, mango, apricot, bready, piss hops and marmalade. The taste is crisp, dry, bitter - sweet, orange marmalade, mango, dried apricot, soda water, bread, touch of toffee, grass and pepper with a dry finish. Medium body and moderate carbonation. Comes across a touch watery, but drinks easy anyhow. Not bad.

Cask-conditioned at the Gryphon, Bristol 27/2/2017. Deep amber in colour, with a moderately-sized, off-white, head. Light beechwood smoke, sweetish tangerine and berry fruits and crisp malts, leading to a smoky finish. Subtle and good.

(Cask at Craft Beer Co St Mary Axe, London, 25 Nov 2016) Golden amber colour with foamy, off-white head. Malty, fruity nose with notes of citrus, resin and grapefruit. Malty, fruity taste with citrus, tropical fruit, grapefruit, resin, sweet chewy malt and a generous citric bitterness. Medium body, with a certain sweetness. Tasty and well made, with a generous hop presence. Nice one.

(Cask at Craft Beer Co Covent Garden, London, 24 Nov 2016) Pale amber colour with frothy, white head. Malty, fruity nose with notes of tropical fruit, citrus and grassy hops. Malty, fruity taste with citrus, grapefruit, tropical fruit, grass and a gentle grassy/citric bitterness. Medium body, with a touch of sweetness. Tasty and refreshing. Quite nice.

Bottle shared at the Chris & Ruth pre GBBF shindig tasting 2016 - London. Cheers! Pours hazy yellow-gold with a creamy, white head. Lightly funky in the nose, some tangy lemon accents. Light sweet flavour with hints of brett, melon, minerals. Light bodied with average carbonation. Drying in the finish, with light tartness, further flinty minerals. Nice one. Interesting.

Bottle shared at the Chris & Ruth pre GBBF shindig tasting 2016 - London. Cheers! Pours hazy pale yellow with a light, creamy white head. Nice peachy and lemon aroma, suggesting some tangy elements. Light sweet flavour, zesty and zippy, with more lemon, some lime. Light bodied with average carbonation. Sweet finish, lightly tart, with some further refreshing lemony accents. Nice beer.
