We spent a year refitting the barn, and installing all the equipment ourselves, before selling our first pint in January 2015. In making our beer we aim to tread lightly on our surroundings. We generate much of our own power from a 15kw solar array; heating from a wood powered boiler and our spent grains keep the local livestock happy.
All the water used for brewing comes from our own spring source deep below the organically farmed land. The water is microfiltered and UV treated to ensure its purity without the need for chemicals. It’s delicious and great for brewing.
Five years on from launch, plenty of awards and some 2 million pints later, by 2020 we were a team of 9 and when we started moving fermenters outside, it was obvious that to keep moving forward, we were going to need a bigger boat. We couldn’t expand in our current building, and really didn’t want to move away from the spring water and the farm. Both of which are part of our DNA. So we looked into the idea of actually building Brewery 2.0 from scratch here.
In August 2020 we were granted planning permission and began building in September. All being well, we hope to move in December 2021.

Hazy golden color. Very big smoked nose with smoked gouda, and modest rye notes in the background. The mouth feel is so-so, with decent rye character and good smokiness. Not too smokey. Not bad.

Grand tasting at Craft Islington with Hackobock. Thanks to whoever bought this cask. Clear gold beer, small pale cream colour head. LIght malts, sweetish. Floral mid. Pithy hops, some citric fruit but mostly pith. Not too bad.

[ As Gun Saison Soufflant ].Unclear medium orange yellow color with a small average, fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, fruity malt, pale malt, light to moderate hoppy, citrus, zest, moderate yeasty, saison yeast. Flavor is moderate sweet and bitter with a average duration, citrus, zest. On gravity at the Seven Stars, Bristol September 2016. Deep gold in colour, with a decent white head. Sweetish, tangerine and pineapple fruits, with some leafy hops, sweet cereal malts, and a dryish finish. Good.

ask-conditioned at the Seven Stars, Bristol, September 2016. Near black in colour with a decent, off-white, head. Sweetish caramel and nut notes, toasty malts, milk chocolate and a touch of liquorice before a gentle finish. Enjoyable.

[ As Gun Project Babylon ].Unclear matt medium yellow color with a small, fizzy, fair lacing, mostly diminishing, off-white to white head. Aroma is moderate malty, pale malt, moderate hoppy, citrus, grapefruit. Flavor is moderate sweet, light light acidic and moderate bitter with a long duration, citrus, fruity, pale malt, sharp fruit - citrus. Body is medium, texture is oily to watery, carbonation is soft. Cask at CBC Islington, 24/11/16. Pale golden blonde with a decent off white cap. Nose is light citric peel, grassy, melon, tangerine. Taste comprises peach, melon, tangerine, straw, light bread, toasted malts. Medium bodied, fine carbonation, semi drying close with a light hop dusting. Innofensive but low end for style.

Cask at CBC Giles, 02/12/16. Golden blonde with a decent off white head. Nose is pale malts, tangerine, melon, soft bread, straw. Taste comprises citric tinged straw, orange rind, peach, light bread dough, toasted grains. Medium bodied, fine carbonation, semi drying close with spattering of hop bitterness. Average for style.

Cask at Craft Islington. It pours clear amber with a bubbly white head. The aroma is fairly subdued...bready malts, cereal and grain. The taste is dry, very bitter, earthy, grainy, cereal, alcohol, resin, bread and grass. Medium body and soft carbonation. A fairly forgettable malt - forward strong ale.
