Bottle. Color: Hazy orange amber, white head. Aroma: Hoppy, floral, Brett funk. Taste: Hoppy, floral and spicy hop notes, Brett, subtle citrus fruit, hints of bread. Light sourness, over moderate going towards medium bitterness at the dry funky finish. Medium body, just below average carbonation. Very nice stock IPA.

Bottle, directly from Le Soupir. Color: Lightly hazy pale golden, frothy white head. Aroma: Spicy, floral, some fruity tartness. Malty and hoppy at the same time. Taste: Complex mix of crisp malt, fruity (stone fruit, citrus) tartness, floral hop, subtle spicy Saison notes, some oak wood. Dry, fruity and bittery finish. Moderate tart and bitter. Just below medium body, below average carbonation. Very nice complexity.

Taste: Refreshing, wheat malt, lemon notes, floral tea notes, some funk and wood. Just below medium body, just below average carbonation. Light to moderate tartness, very light sweetness. Dry-ish, earthy finish. Nice one.

Bottle, directly from Le Soupir. Color: Lightly hazy pale golden, white head. Aroma: Fruity tartness, peach. Taste: Moderate tartness, fruity peach, subtle rhubarb, earthy notes, some funk and oak wood. Just below medium body, just below average carbonation. Dry-ish finish. Nice.

Bottle. Color: Hazy golden, white head. Aroma: Subtle fruity and funky. Taste: Earthy, fruity notes of rhubarb and some grape, subtle funk and wood. Crisp. Dry-ish and more bittery finish. Just below medium body, just below average carbonation. Light to moderate tart and bitter. Light sweetness. Bonus point for the complexity of this relatively low alcoholic beer.

Very light bitterness. Medium body, just below average carbonation. Nice.

Bottle. Color: Hazy pale golden, large frothy white head. Aroma: Light tartness, fruity citrus, Brett funk, hop. Taste: Stable and bit leathery Brett, subtle fruity lime and orange, orange zest. Light tartness. Nice amount of green hop, leading to a long lasting, bone-dry and bitter, bit spicy and funky finish. Starting moderate bitter, finishing over medium bitter.
Very nice hoppy Saison.

Bottle from Le Soupir pack 2025. Color: Lightly hazy amber, off-white head. Aroma: Malty, Brett, hints of peat. Taste: Mix of peat, leathery Brett, malt, some oak wood, hints of floral hop and dark dried fruit. Light to moderate tartness and light sweetness. Nice one, personally I prefer this one above the (more complex) red grape macerated version (Part Two).

Bottle. Gusher. Color: Hazy pale yellow-ish golden, white head. Aroma: Wheat, vinuous, some tartness, hoppy notes. Taste: Nice blend of wheat malt, hop, citrus and stone fruit notes, some white wine, some oak wood and funk. Light to moderate tartness, finishing very dry with over moderate bitterness. Just below medium body, below average carbonation. Nice complexity. Typical Le Soupir: Quite low in alcohol, not your average kind of beer, full of taste and a lot of flavours to explore. Very nice.

Bottle from Le Soupir pack 2025. Color: Hazy orangish brown, thin off-white head. Aroma: Malty, caramel, some red fruit, vinuous notes, caramel, hints of peat and Brett funk. Taste: Complex mix of peat, caramel malt, red grapes, subtle leathery Brett funk, oak wood, red fruit, floral hop. And I feel like I'm doing the complexity of this beer no justice yet with this description. On the other hand, it's not an Old Ale like I tasted any time before. Moderate sweet, some vinuous tartness and moderate to over moderate bitterness. Nice complex one.
