Appearance - 8 | Aroma - 8 | Flavor - 8.5 | Texture - 9 | Overall - 8.5
Bottle. Color: Hazy pale golden, large frothy white head. Aroma: Light tartness, fruity citrus, Brett funk, hop. Taste: Stable and bit leathery Brett, subtle fruity lime and orange, orange zest. Light tartness. Nice amount of green hop, leading to a long lasting, bone-dry and bitter, bit spicy and funky finish. Starting moderate bitter, finishing over medium bitter.
Very nice hoppy Saison.

Bottle from Le Soupir pack 2025. Color: Lightly hazy amber, off-white head. Aroma: Malty, Brett, hints of peat. Taste: Mix of peat, leathery Brett, malt, some oak wood, hints of floral hop and dark dried fruit. Light to moderate tartness and light sweetness. Nice one, personally I prefer this one above the (more complex) red grape macerated version (Part Two).

Bottle. Gusher. Color: Hazy pale yellow-ish golden, white head. Aroma: Wheat, vinuous, some tartness, hoppy notes. Taste: Nice blend of wheat malt, hop, citrus and stone fruit notes, some white wine, some oak wood and funk. Light to moderate tartness, finishing very dry with over moderate bitterness. Just below medium body, below average carbonation. Nice complexity. Typical Le Soupir: Quite low in alcohol, not your average kind of beer, full of taste and a lot of flavours to explore. Very nice.

Bottle from Le Soupir pack 2025. Color: Hazy orangish brown, thin off-white head. Aroma: Malty, caramel, some red fruit, vinuous notes, caramel, hints of peat and Brett funk. Taste: Complex mix of peat, caramel malt, red grapes, subtle leathery Brett funk, oak wood, red fruit, floral hop. And I feel like I'm doing the complexity of this beer no justice yet with this description. On the other hand, it's not an Old Ale like I tasted any time before. Moderate sweet, some vinuous tartness and moderate to over moderate bitterness. Nice complex one.

Bottle Color: Pinkish red, light pinkish head. Aroma: Tart, fruity, subtle funky. Taste: Moderate to over moderate tart, wellbalanced fruity mix of peach and raspberry. Just unde rmedium body, average carbonation. Subtle rural funk and hints of wood. Nice low-alcoholic fruity Berliner Weisse.

On tap at La Binouze, pours a clear golden with a small white head. Aroma has a nice spicy saison yeast and a touch of black pepper. Flavour has bright spicy saison yeast, rustic notes, and a touch of pepper. Dry, spicy, and biting. This is excellent.

Bottle, directly from brewery. Color: Slightly hazy golden, white head. Aroma: Mix of wood, funk, fruity hints (berries, grape). Taste: Nice and very well balanced mix of wood, rural funk, fruity berries, grape and hints of forest fruit. Hints of Sherry(?). Light to moderate tart, light sweetness and very light bitterness. Medium body, below average carbonation. Nice complexity. Great blend.

From bottle at Carnivale Brettanomyces 2024. Nice blend of fruity hops with balanced bretty funk. Picking up citrus, lemon, soft tropical notes. Finishes with dry brett and hoppy bitterness. Great.

From bottle at Carnivale Brettanomyces 2024. Balanced blend of cider and wild ale with elderflower. Notes of apple, soft funk, citrus, apple skins. Love it.

Bottle. Color: Hazy pale golden, fast disappearing white head. Aroma: Peach, barnyard and leathery funk. Taste: Moderate to over moderate tart, wheat, peach, wood, tannins, subtle funk, bit minerally. Just below medium body, just below average carbonation. Nice one!
