Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.

Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

Pretty chestnut, fluffy tan head.Nice chocolate nose and palate. Light berries in taste.Smooth and quaffable, bit a bit thin

Cloudy amber, head dissipates immediately. Dry salty nose. Quite tart fruity palate. Not really a fan

473ml can. Pours a slightly hazy gold-yellow with a medium, foamy, long lasting, off-white head that laces. Dank aroma of biscuit malt, tropical fruit, peach, orange, pine and weedy hops. Sweet fruity flavour of caramel malt, orange, grapefruit, apricot, peach, pineapple and pine resin in a dry, bitter grass finish. Medium body with an oily texture and average carbonation. Hop forward and tasty.

Soft dark lager aroma, the body is black enough with some boring hazy foam. Flavour is bright enough malt and molasses with sharp brown sugar hints. Mouthfeel is dry enough. A good attempt, everything works well.

Sweet lacquer thinner aroma, has clearish copper body and modest head. Flavour is.... yeesh. Huge boozy sweetness, maybe some grain if I can recall what I my name is. Actually reminiscent of the cheap strong lagers I used to buy in Paris. Mouthfeel has lingering booze all over the place. It's inexcusable for Phillips to do something like this, they know how to hide alcohol so I don't know why they didn't bother here.

Okay sweet hop notes on the nose, has a hazy body but not too hazy. Flavour is soft hops with sweet grain hints. Mouthfeel is full anyway. A hoppy kölsch indeed, but something's missing.

Nothingness on the nose, has weak yellow body with bad foam. Flavour is soft grain - very, very soft grain. Mouthfeel is not crisp enough. This is a boring attempt at a bad style. Why bother?
