Description
Founded in 2018, by Jasper Tupman and Stuart Winstone, who share a passion for foraging, fermentation and flavour. These two invested everything they had, to build their unique vision of carefully crafted beers with a strong sense of place.
Later joined by Dave Williams as Head Brewer and Lee Calnan as Sales Director, 2020 marked the next phase of development for a small team with big ambitions; to bring innovative, modern farmhouse brewing to a wider audience in the UK and beyond.
By brewing with the very best of local ingredients and alternative techniques that span between historic styles and modern brewing technology, our approach to mixed fermentation and barrel ageing puts the emphasis on balance of flavour and drinkability. Minimal intervention is the key to ensuring that there’s a little bit of nature in every sip.

Bottle from Hoptimism. Funky and floral aroma, with a spiciness to it. Slightly hazy copper gold. Translucent white head starts off foamy but fades. Light bitter with a prickles of tartness. Citrus and spice. Herbs. Picking up some sweetness in the finish. Medium bodied. Almost a dence mouthfeel, buoyed by a soft-fizzy carbonation. Long low key finish. I like. Smooth drinking and saison-esque.

Keg at the hanging bat. Pours golden, nose is grassy, vegetative, taste is hay, grassy, toffee.

On keg at the Hanging Bat. Appearance - bright orange with a light haze. Nice lacing. Nose - orange peel. Flowers. Taste - biscuit and orange. Mixed fermentation interesting as fruity pale ale notes but also sour cut away. Palate - light to medium bodied with a tangy texture. The finish is dry and tangy and long. Overall - this is a delicate beer which persists.

Bottle. Beer Stop, Dronfield. Hazy straw colour. No head. Looks lifeless. Nose has wheat and spelt like grain. Runny honey. Soft, lactic like funk. Taste is a little tart. Some honey sweetness. Medium body. Pretty flat and dull. Barely any carbonation. Some tartness to finish.

Bottle from Cork & Cask. Hazy golden body with a short-lived head. No visible carbonation. No lacing. Aroma of orange, lemon and straw. Flavour of funky lemon and apple. Thin body with a watery texture. Weak fizz. It has interesting notes but I feel like it could be a bit fizzier and fuller in body.

Bottle from Cork & Cask. Hazy amber body with a thick off-white head. No visible carbonation. Patchy lacing. Aroma of apple and lemon. Flavour of elderflower and sherbet. Thin body with a slick texture. Soft fizz. This is really unique and refreshing.

0,375 flaske fra Utobeer Borough Market nov-18, delt med Steven hjemme hos ham: uklar gylden med ok skum. Funky og samtidig halvsøt aroma og smak med lys, søt citrus, gule epler og gjær. En viss beskhet sammen med stall/høy i avslutningen. Flott munnfylde for bare 3.8%, og lang ettersmak med urter, stall og milde krydderurter.
