Description
We are a little brewery situated in the original Hopcat location in GR. We have been brewing since 2008. We are the only Hopcat in the family with a brewery. Style labels are next to useless around here. We embrace the strange, push boundaries and value balance and subtle complexity over extremes.

Sampled from the tap at the 2010 MBG Fall Fest. Poured a near clear amber orange with a yellowish gray head that dissipated to the edges. Aroma had a strong pine note with a hint of citrus and a bread backing. Flavor was full of pine with some sweet bread and a light floral and fruit hint.

Sampled from the tap at the 2010 MBG Fall Fest. Poured a cloudy purplish brown with a slight yellow he and a yellowish head that dissipated to the edges. Aroma had a nice earthy tone with some dark fruits and a bit of sweet grains. Flavor was full of dark fruits and some sweetness coming from the malts in the finish.

On tap at HopCat. Pours a medium/darkish brown with little head. Aromas are a mishmosh of brown sugar and dark fruit with a little bit of an alcoholic edge to it. Flavor is pretty good, with a very nice bourbon edge to it. This is the second of HopCat’s bourbon barrel beers I’ve tried, and I’m not quite sure what they are doing, but they are getting an unbelievable bourbon kick out of their barreling process. Good stuff.

On tap at HopCat. Pours a light brown with little head. Aromas are a thing of wonder... pure grapefruit with a very light bourbon edge, but you’d almost have to be looking for it to find it. Flavor is a totally different matter... the bourbon had metastasized and has nearly completely taken over... all that hops from the nose has been pushed out of the way by a bullying bourbon and peat that dominates mid to late palate and makes me wonder whether they actually aged it in barrels or just spiked the beer with bourbon. (Pretty sure they didn’t but there is a huge bourbon flavor... really... no, I’m serious...)

On tap at HopCat. Pours a kind of orange color with a thin head and aromas that are just flat out good IPA stuff... a bit of pine and citrus and a little caramel malt. Flavor is very good... maybe the hops was a little crisper on this batch than on previous ones, but the pine and grapefruit stood out nicely against the malt backdrop. Finish was sharp and refreshing.

On tap at HopCat. This caught my eye and I thought that it would either be pretty good or freaking terrible, but my curiosity was up. Pours a hazy gold that I guess has a slight pink shade to it, but that might just be my imagination, too. A bit of a head, and aromas are heavy with rhubarb at first, but I either become disabused to it or it fades a bit, leaving a light malt and herb aroma. Flavor... so I don’t know quite what it is with this beer, but it hit a chord with me... Maybe a long day in the sun, maybe distant subconscious memories of mom’s rhubarb... who knows? Normally saisons are not my favorites as the malt and yeast combination seems to disagree with me... This beer is different, the malt and spice/herb presence is kept nicely in check by the tartness (understated, although my understanding is that plans for a more robust presence in the future do exist, according to un-named inside sources). This is a damn fine beer...

On tap at HopCat, Grand Rapids. Deep murky brown body with reddish highlights, thin-medium tight cream head. The initial whiffs of the aroma were an unappetizing blend of rubbing alcohol and bandaids, with buttery oak and syrupy burnt sugars somewhat mitigating against the horror. Hot, sharp body, with charred caramels and brown sugar, buttery oak, and bourbon. This beer could be served in a shot glass.

Draught at HopCat, RBSG 2010. Green apple, grapefruit, Japanese mikan flavors, with lots of citrus zest, especially grapefruit peels. A bit of bourbon in there too. Doesn’t work for me. Sloppy and harsh.

Draught at HopCat, RBSG 2010. Black with no head or lace. Barrel aroma with a slight fruit tang. Flavors of fruity chocolate. Winy, with plums and alcohol. Ok.
