Big Boss has been through a lot of incarnations. In 1996 Tomcat Brewing started which became Pale Ale (it was really owned by the same people), then it became Rock Creek, and that’s when Brad Wynn became involved. Rock Creek became Chesapeake Bay for a very short time and nearly went under. We came back and started Edenton, and then, fortunately, Geoff Lamb bought it and we became Big Boss.

Pours almost black from the bottle. Dark tan head, foamy, fizzy, obviously the product of quite a lot of carbonation. It soon fizzes away. Aroma is oak, cherry cough drop, chocolate, burnt. Taste sour with sweet undertones that become more prominent at the finish. Body is medium with an aggressive carbonation up front that rapidly slackens. Overall a good stout/sour ale hybrid that does not shy away from going off the beaten track.

Bottle 12fl.oz. [ As Big Boss Saints & Sinners ].Clear medium orange amber colour with a average, frothy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, sour, caramel, tart. Flavor is moderate sweet with a long duration, sweet malt, caramel, tart, wood, sour fruit, lemn - citric, dry. Bottle, 5%. Clear amber with small off-white head. Aroma is malt, caramel, spices, little sour fruit and herbs. Flavour is malt, sour fruit, spices, caramel, citric, lemon, sour, medium sweet and a little dry.

Bottle. Frothy white fair mostly deminishing head. Amber colour. Light malty and hoppy powerfull sour aroma. Moderate bitter moldy flavor. Average light bitter finish. Oily palate.

Bottle @ fonefan tasting. Nice head with good duration. Color is amber. Aroma and taste are lactose acid, sour malt, fruits, citrus, caramel and hops. Nice sour finish.

Dark golden- amber colour, medium-sized white head. Aroma has bretta, cheese and white grapes. Light to medium-bodied. Sweetish fruityness, wood, vanillla, grapes and bretta. White wineous, easy funky beer.

Bottle stamped best by 10/7 > stemless wine glass A: Clear pale gold with 1/2" of white head. Good retention and elaborate lace. S: Winy aroma of green apple or pear and a little alcohol surprisingly. T: Bitter but also sour flavor with the same wine notes from the nose. Fruit notes not as pronounced as in the nose and alcohol again seems present. Faint hint of sweetness lingers along with a medicinal note. M: Light bodied with slightly oily mouthfeel and low carbonation. O: Average at best with nothing standing out and only a fair to middling taste.

Bottled 355ml. -from Beergium. Amberish coloured, minimal white head, spicy pumpkin and whiff of wood in the nose. Sweet malty, spicy pumpkin, notes of oak bourbon barrel and touch of vanilla. Sweetish and spicy finish. Not the best I've tried but in any case interesting.

[ As Big Boss Prometheus Unbound ].Clear dark black brown colour with a average to large, frothy, good lacing, mostly lasting, beige head. Aroma is moderate to heavy malty, roasted, burnt, tart, wine - red wine, glue, wood, oak. Flavor is moderate sweet and light to moderate acidic with a long duration, tart, wood, peat, glue - oak.
