Description
Founder and head brewer Michael loves to spend most of his free time in the mountains and as a keen mountaineer and fell runner he has visited most of Britain's walking and climbing regions. In the past he has also climbed some of the highest mountains in the alps, as well as frozen waterfalls, abseiled down seacliffs in Cornwall (only to climb back up again...), climbed the crags of the Peak District, walked and scrambled extensively in Snowdonia and the Lake District. Closer to home he has battled the Scottish winter (and sometimes the 'summer') to both walk and climb. Some of his more exotic climbing destinations have included rock climbing on the arctic Lofoten islands of Norway and trekking in Kyrgystan. Following a move to Edinburgh, Michael founded Top Out in 2013 with his friend Moo and bringing his passion for climbing to our beers as well.

Bottle from Appellation Wines. Appearance -opaque black with a nice head. Nose - initially a little stinky then chocolate and brown sugar. Taste - brown sugar going into black Jack sweets. Palate - large structure big chunky texture sweet and slightly cloying finish. Overall - big but a little imbalanced.

50cl bottle from Appellation Wines. Appearance - lovely golden orange colour with a nice fluffy head. Nose - very yeasty and hoppy initially, then toffee comes afterwards. Taste - dominated by a citrus sherbet note, then a dry finish. Palate - light to medium in body, with a lean zingy texture but quite impressive length given the alcohol. Overall - good beer.

500ml bottle from Appellation Wines - cheers Ash! Pours dark brown, near-black, with good thin tan head. Earthy aromas, smoke, charcoal. Chocolate comes through on the taste, and whilst it’s very smoky, I don’t think it’s too much. Reminiscent of Schlenkra beers. Creamy texture, good carbonation. Very nice.

Re-rating on 01.11 13 this time the smoke and chocolate malt is much more integrated. Very enjoyable. Previous rating 06.09.13 7+4+6+3+12=3.2 50cl bottle from Appellation Wines. Appearance - opaque black with a decent crema head. Nose - woodsmoke, earthy & charcoal. Taste - dark chocolate and loads of smoke that slightly overpowers it but the dark chocolate does come back. Palate - medium bodied with a fairly decent creamy texture and a dry finish. Overall - the smoke is a little too dominant but it’s an interesting beer. If the alcohol was up by 2 or 3 percent you’d probably have enough sweetness to balance out the smokiness.

Bottle from Appellation Wines. Pours a reddish brown with decent head. Agree on the big aromas - full of dark fruit and demerara sugar, and almonds. Slightly sweet taste initially, drying out towards the end. Good.

Bottle from Appellation Wines, shared at home. Re-rated 13/09. Pours hazy amber with a good white head. Lots of spicy yeastiness in the aroma, and citrus, bready malts. Still has that sherbet note, but more subdued and rounded, finishing with an dried orange peel flavour. Very nice.

Tried in bottle and cask. Amber body with an off-white head that holds well. Aroma of biscuit, lemon and a hint of cucumber and white pepper. Flavour of grass, lemon, green vegetables and pale malt. Subtle peppery spice. Medium body with an oily texture. Very soft carbonation. A decent, simple Pale Ale.
