Admin Note: Formerly known as Wunderkammer Bier and brewed at Hill Farmstead where Vasilios Gletsos was a brewer until January 2020. As his noncompete clause is winding down he has rebranded as Wunderkammer Biermanufaktur. The beer is brewed at a former Vermont dairy barn that has been repurposed.

Tap @MBCC2018, Red Session. Clear dark amber, white head. Woody, herbal aroma. Sweetish, caramely flavour, herbal bitterness, light smoke.

Tap. Rather clear deep amber color with white head. Aroma is smoked, ham, caramel. Taste is the same. Oily mouthfeel with medium carbonation. Super complex, super tasty!

Light, translucent haze in this drab brass-bronze beer. Off-white head atop shows moderate retention.
Nose is quite tart and juicy, with prominent Brett displaying lime, light leather and various other "dry" and "acidic" elements. Some cereal-like character stemming from the adjuncts, I assume melds with the oak to really soften and deepen the nose, balancing things and adding complexity. No flaw, alcohol or surplus of oak/acid.
Tart, dry and with a soft, malty, well-attenuated texture featuring tight carbonation. Juicy lemon-lime-like Brett notes balance a moderate honey-vanilla malt character while light cereal, oak and vanilla add complexity. Tons of flavor and lip-smacking tartness on the finish. Nothing overdone here. Really enjoying Wunderkammer.

Hazy, Light colour. Can't say it looks good. All kinds of pedio on the nose - fresh cow shit. Like the kind that's still steaming in the snow. I say snow because it's clear that the cow was eating hay, not grass. On the palate, it's tart, and has a nice bretty character. Some woody notes. Fresh, lively acidity. Really quite nice on the palate, so different from the aroma that has you musing on the gorgeous aromas of pediococcus.

375ml bottle at Matt's. Pours a rose-ish blonde with a white head. Aroma is fruity and acidic. Similar taste. An ok.

375mL bottle, pours a hazy golden with a small white head. Aroma brings out lots of rustic saison yeast, mixed wild yeast, and light tart citrus. Flavour is oaky, with lightly tart citrus, mixed wild yeast, and rustic farmhouse notes. Light tart, wild and finishing with some manure notes. Nice stuff.

From bottle thanks to Vasilis and Fotis!! Light hazy golden color with white head. Yeasty aroma, funky, dusty, wood, tart citrus and stone fruits, spicy - herbal. Sweet, light bitter and very light acidic taste like aroma. Medium oily body with soft carbonation.
