Admin Note: Formerly known as Wunderkammer Bier and brewed at Hill Farmstead where Vasilios Gletsos was a brewer until January 2020. As his noncompete clause is winding down he has rebranded as Wunderkammer Biermanufaktur. The beer is brewed at a former Vermont dairy barn that has been repurposed.

Bottle to tulip.
Appearance: glossy burnt yellow color with a white foamy and semi-fizzy head which dissipated fairly quick. No lace.
Aroma: fresh green tree leaves, lemongrass, funky/woody tone, slight pineapple, freshly cut grass, some tree bark
Flavor: takes all the prior noted aromas to blend in an earthy sweet to savory mix, somewhat a lemongrassy to woody finish
Texture: medium bodied, good as a sipper because this beer is extremely dry
Overall: not a real APA in any sense of that style, I would say this is more of a sour/wild ale but that's just my two cents.

Clear, bright golden-brass. Finely-carbonated producing a dense, creamy, off-white head of good retention.
Rich mugwort with good, but not-overdone juniper acidity. Would be easy to overdo it on juniper, but this seems to push it fairly far, but not too far. Leaves a white grape, mineral and rich, herbal character with a strong aroma overall and soft funk balanced by strong malt (honey and biscuit-like notes).
Light and fluffy with dainty, honey-like malts that are balanced by juniper acidity. It dries out the finish considerably, with mugwort giving a woody and earthy character alongside it. Incredibly flavorful, yet elegant without too much acid overall. Mild funk, big mineral, big herb, ample malt. Just so much flavor and balance, ultimately, with the masterful balance throughout, showing Vasili as the world class brewer he is.

Super clean beer, refreshing tartness, moderate citric bite, low funky subtle lemon, floral accents, a little salinity. Quenching and dry to finish. Light bodied and spritzy.

Tart and floral, lemony and fairly acidic. Some pine needles, mild grass, ample zippy lemon. Dry, sour finish. Quite tidy.

Poured from 500mL bottle (bottled June 2023; thanks Derek & JF). Hazy gold with small white head. Soft mixed culture character, feint lemon character, very nice.

Draught @ Beer Run - Harlem, Manhattan NYV (June 2025). Clear golden with a large foamy off-white head, sharp funky aroma, high carbonation, medium bitter medium tart funky malty taste, thin body, long tart finish. Nice brew.

Slight gusher. Large, off-white head and a clear, carrot juice-rose-rust body.
Lactic acidity a bit more prominent than in most of their other beers. Keeping in mind this was 4 years ago, and I really think he's come A LONG way in the refinement of his beers since then. Good adjunct character; not overdone. Light malt, pretty well-attenuated.
In the mouth there's a sweet, adjunct sugar character and slightly punchy lactic acidity. Other than that, the adjunct flavors aren't overdone and there's a good malt texture with pretty good attenuation. Tough to have this one after the Double Barrel version, which is a masterpiece. Still a pretty nicely-done little quencher.
