Admin Note: Formerly known as Wunderkammer Bier and brewed at Hill Farmstead where Vasilios Gletsos was a brewer until January 2020. As his noncompete clause is winding down he has rebranded as Wunderkammer Biermanufaktur. The beer is brewed at a former Vermont dairy barn that has been repurposed.

On tap at Blackback Pub. Pours a dark ruby with small off white head that lasts. The aroma is a strong raspberry candy and wood. Slick body, raspberry, jammy, wood, nice tartness, very good.

500mL bottle drunk 7/13/24. Clear brass with a small, spotty, white head. Beautiful dry hop in the nose, melded perfectly with the mixed culture and balanced by generous, honey and biscuit-like malt. No aggressive notes whatsoever, nor too much lactic character. In the mouth it's soft, malty, with juicy mixed culture acidity and wonderful dry hop/hop that still remains after 2 years. Incredible balance and strong but mellowed/aged flavors with an excellent malt texture and attenuation.

April 2023, 500mL bottle drunk 7/13/24. Clear brass. Small, white head, lower retention. Beautiful nose with prominent yarrow and hop, homogenized well with mellow mixed culture and rustic grains. Clean and brightly aromatic. In the flavor it's incredibly flavorful, with clean, rustic malts that are well-attenuated. Herbs are shockingly low in bitterness with absolutely no astringency. Hops even come through here, pleasantly, with gentle brett and lingering fruitiness and mild lactic notes on the finish.

Bottle from Beerdome. Golden with a white head. Aroma is sweet, malty, citrus and acidic. Flavor is medium sweet and pretty acidic.

Bottled Feb 2023, drunk 11/26/23. Clear violet-blueberry. Small, pinkish head. Nose is a lot of currant and light blueberry spice. Juicy, tart, aromatic, clean. Soft, rustic grains to balance the acidity. Very bright overall. Soft, malty, juicy, huge blueberry character. A bit lighter-bodied than usual, at least compared to the fir and yarrow beers. Vanilla, pepper, sweet blueberry juice and minimal bacterial influence. Fruit is excellent, but I wouldn't hate a bit more beer character.

500 mL bottled August 2022. Drunk 11/25/23. Brass, bronze. Clear, small, white head slowly to ring. Well another nutty nose. Maybe a shade less intense and perfect than the fir but still phenomenally well expressed. Sage, lavender, pepper, all sorts of herbal and earthy notes. Minty, spicy, herbal, well-fermented. Juicy, massively herbal and succulent. Honey, biscuit, rustic grain. Mellow lactic and big Brett notes with pineapple and stone fruit. Lingering juicy herb and band aid.

500mL bottled July 2022. Drunk 11/25/23. Clear, straw blonde. White head steadily to ring. Well that's a nose. That is probably the purest expression of fir tips I'll ever smell in a beer. Good mixed culture character, dare I say some fermented balsam? It's powerful, clear and beautifully done. Flavor is well integrated balsam with a strong maltiness and good attenuation. Minty almost with earth, biscuit, light honey. Mellow lactic acidity. Just impeccable. Balanced.
