Our beers are a collection of beautiful and strange objects from the outside world, brought together by experience, curiosity and passion for your delight.
Admin Note: Formerly known as Wunderkammer Bier and brewed at Hill Farmstead where Vasilios Gletsos was a brewer until January 2020. As his noncompete clause is winding down he has rebranded as Wunderkammer Biermanufaktur. The beer is brewed at a former Vermont dairy barn that has been repurposed.

375mL bottled Aug 2022, drunk 3/4/23. Mostly clear, blonde-brass-golden. White head, small, moderate-to-low retention. Lactic nose, with lots of pepper and lemon. Very tart and spicy with good honey and biscuit. Soft, malty, well-attenuated, big lactic character, lots of malt and spelt texture. Juicy, lemon, soft and attenuated, but nice and rich. Adds some light stone fruit with warming. Vanilla, pepper, very clean and well-structured. Damned fine.

Bottle, 500 ml, courtesy of Miro B. Shared with him, JFK10000 and Miro. Hazy yellow with small white head. Citrus, herbal, spicy, funk. Medium sourness. Refreshing. Somewhat short finish, but very interesting.

Bottle at Farmhouse Grill, 8/12/22. Pale blonde-straw. Medium sized, white head of moderate-to-low retention. Rustic grains and dainty, expressive, well-developed Brett showing unripe pear, very mild lime and bits of honey and grain on the end. Soft and even. Clean, straightforward pear-like Brett with floral notes and supportive, attenuated malt. Great Brett character through and through.

Bottle at Farmhouse Grill, 8/12/22. Deep amber-cherry. Small, off-white head. Cherry pie, honey and caramel-like malts with moderate aceto-lactic acidity, light vanilla and tons of red fruit. Soft and malty with ample sweetness balancing moderate souring bacteria and fruity Brett. Lots of cherry, caramel, honey, light vinegar.

Foam draught, 8/12/22. Peachy-copper-golden. Medium white head shoes. Good retention. Mild, peachy-appley nose. Mild lactic acid. Light barnyard with spice and strong fruitiness. Earthy, mild, somewhat bland, minimally tart flavor shows peach and wheat with light lacto-acetic acidity. A bit bland, unfocused/messy. Texture is too loose for its size.
