Admin Note: Formerly known as Wunderkammer Bier and brewed at Hill Farmstead where Vasilios Gletsos was a brewer until January 2020. As his noncompete clause is winding down he has rebranded as Wunderkammer Biermanufaktur. The beer is brewed at a former Vermont dairy barn that has been repurposed.

Bottle. Healthy Living Market, Burlington, VT. Pale, hazed yellow gold. Fine white head is lasting and semi lacing. Nose has rye grain. Preserved lemon. Sweet flora. Lavender like herb. Touch of white pepper. Taste is dry and peppery. Some herby sweetness. Clean and sharp on the palate. Zingy carbonation. Tart and sharp finish. Lovely job.

Bottle thanks to Vin! Pours hazy golden yellow, small fizzy white head, dissipates pretty quickly, decent residual and lacing. Aroma is dust, Brett, lemon, and yes, Juniper. Flavor is very light tart, light plus funk, bright citrus, herbal punch. Medium body, spritz carbonation. Quite noice.

(Bottle shared by Quentin @ Luc's, Oct 19/19) Pours lightly hazed deep orange with an eggshell head. A truly unique and bizarre set of aromas and flavours, with clear spruce/fir/pine aromatics, juniper/cedar woodsiness, sweetish malt core with caramel and spicy rye, but also prominent acidic citrus bite, vinous woodiness, spicebox elements, intense herbal coniferous slightly astringent finish. Medium bodied, oily. Wow, what an experience, unlike even any other spruce beer I've had. I can see why this is divisive, and I was a little tipsy when I tried it, but I honestly thought it was great.

Bottle: Poured a pale-yellow color ale with a medium size white foamy head with light retention and minimal lacing. Aroma of apple notes with some sour notes and light spices is unique but enticing. Taste is also a mix of apple notes with some cider-like quality and woody notes with some light tartness and light spices and funky ester. Body is about average with medium carbonation. Unique experience and quite enjoyable with high level of complexity.

Bottle. Pours clear golden orange, small off white head, good lacing. Aroma is lime, salt, bugs, hibt of white grape. Flavor is medium tart. Light body, low carbonation.

Bottle: Poured a clear red/amber color ale with a medium size foamy head with limited retention and light lacing. Aroma of tart notes with light earthy notes. Taste is a mix of dry caramelized malt with some tart notes, some earthy tines and light vegetables notes. Body is about average with good carbonation. Enjoyable sour thought not of lichen and mushrooms are not as apparent as I was expecting.

Bottle. Whole Foods Market, Burlington, VT. Faint haze on a pale gold. Slim white head stays the course. Nose has lime and lemon sumac. Sweet apple. Whiff of smoke. Some wheat. Taste is a little sweet to start, turning pretty dry overall. Clean and bright on the palate. Fine and crisp carbonation. Dry and clean finish. Decent enough, but lacks a bit of punch.

Bottle: Poured a deep amber color ale with a medium size off-white foamy head with limited retention and not much lacing. Aroma of tart notes with light acidic notes and some vinous and herbal notes with light caramelized notes also perceptible. Taste is a mix of herbal notes with light caramelized notes, some vinous notes with some oak presence and light acidity noticeable in the aftertaste. Body is about average with good carbonation. Enjoyable beer with nice complex mix of flavours.

Taster showing dark gold with sparse white foam. The nose shows intense floral notes of passionfruit and rose. The palate is moderately carbonated and medium bodied. Mild tartness with floral forwardness and oak notes. Mild bitterness on the finish.

50cl bottle from CBC Waterbury, pours a hazy sepia, basically no head. Looks like iced tea. Mint is huge on the nose, black tea, lemon, salsify. Nose is wild, smells like no beer you've had. Flavor has some malt, some soggy bread, a little mushroom, but there's a nice a medicinal/herbal note running all the way through. Neutral barrel, but band aid is there now, no funk though, mint, basil seed, potpourri. Tastes a bit like kombucha, some maybe some ginger notes. Incredibly unique. 8 2 8 4 14
