Admin Note: Formerly known as Wunderkammer Bier and brewed at Hill Farmstead where Vasilios Gletsos was a brewer until January 2020. As his noncompete clause is winding down he has rebranded as Wunderkammer Biermanufaktur. The beer is brewed at a former Vermont dairy barn that has been repurposed.

500ml bottle. Opalescent, orange golden colour with average to huge, dense, firm, frothy, moderately lasting, minimally lacing, white head. Bretty, funky yeasty and minimally lactic, spicy, tangy aroma, wheaty malty background, hints of brine, whiffs of sumac, pomegranate, sauerkraut, Greek yoghurt. Taste is tart, bretty and funky yeasty, minimally lactic, minimally fruity and tangy, hints of brine, pomegranate, a touch of sumac, yoghurt, wheaty malty basis. Watery texture, minimally astringent palate, medium, scattered, mildly prickly carbonation. Rather monotonous - not overly impressive.

A lightly hazed blonde ale with a thin lacing white head. In aroma, sweet fruity mix of tart berries, light pine needles, light grapefruit, pleasant. In mouth, a nice tart mix of ground cherry, light lactic notes, light Brett, very nice and smooth. On tap at ChurchKey.
Too funky for me, which is rare.

Snally: pours pale gold with white head. Peppery and spicy with citrusy notes. Funky. Interesting. Vegetal and strange.

Snally: pours amber with white head. Aroma is weirdly malty and funky. Weird mix of England and Belgium. Don't know what to think of it.

Bottled June 2023, drunk 10/2/24. Clear, brassy-gold. Smattering of white head. Just beautiful yarrow and gin. Mineral, malt, beautiful mixed culture, biscuity, rustic grain and so much mellow culture. Soft, malty, lots of juicy, bitter, floral yarrow, juicy citrusy gin. Good dryness, but supple malt, tangy but mellow culture. Juicy oak. Just crazy how good wunderkammer is these days.

Bottled June 2023, drunk 9/14/24. Rusty-coppery-bronze. Very carbonated, large, white head. Lactic culture is front and center with some noble hop notes and maybe a bit of spicy phenols from Sacch. Clean, straightforward, a bit oaky, but no actual sherry I can find. In the mouth there's a bit of sherry, actually. Excellent malt depth, dryness, moderate saison character, very farmhousey (strong mixed culture). Love the deep, soft, rich malts. Mellow and flavorful.

Bottle thanks to Dee. Pours a hazy yellow with small white head that lasts. The aroma is floral, mineral, grass, juniper. Slick body, mineral, grass, funky, bitter finish, very nice.
