Description
Established in 2014, owner Seamus McMahon has set up a lovely brewery in one of the old sheds, located behind the milking parlour. This brewery is set up on a working Dairy Farm. The team have renovated the shed to exacting specifications. The brewery is set amongst the rolling drumlins of County Monaghan. Our aim is to create distinct beers that are brewed with care and affection. We have created a range of well balanced and flavoursome ales that reflect the changing face of the beer market in Ireland.

Imperial stout from Ireland aged in Irish whiskey barrels, thanks Craftmember for sharing. Tiny-bubbled and open, yellowish beige, thin head on a jet black beer. Aroma of bitter black chocolate, dry caramel, salmiak, whiskey indeed, bayleaf, beef stock cubes, burnt wood, some light vanillin from the oak, coffee grounds, roasted walnuts, hints of pan-fried forest mushrooms, black pepper and leather. Quite heavy on the umami side in the mouth, with beef stock, gravy and black olive aspects, paired with a restrained sweetness of dried fruits (fig) and moderately carbonated; full, oily mouthfeel, deep bitter black-chocolatey malts, with layers of toasted bread, walnut and a lot of roasted coffee-like bitterness overwhelming the already subdued sweetness – this is oldskool imperial stout all the way. Herbal hops further accentuate the end bitterness, as does a warming glow of otherwise soft Irish whiskey – yet some nutty sweetness keeps balancing everything well. Bit too boozy and umami-forward for me personally perhaps, but nonetheless a long-stretched, robust, roasty, rich old-fashioned imperial stout that put many overly sweet pastry stouts of our present day to shame.

Drsught@uba ja Humal, Tallinn. Black colour, small head. Aroma is oak, some liquorice, chocolate and mild toasted toffee. Flavour is toasted toffee, mild roast, some wood and a bit alcohol as well.

Tap at UJH. Opaque colour and tiny beige head. Toasted aroma with touch of vanilla. Medium-bodied. Toasted, whiskey flavour, some chocolate. Balanced.

Bottle from Khoury's. They had another couple on tap too. Stemless back at the hotel room. Opaque, dark brown on black, cookie creme head. Mild coffee, slight fat smoke, vanilla, acidy-sweet whisky nose. Lovely texture, silky, low carb, faint astringency on the finish. Bittersweet leaning sweet, sweet charcoal, wood pith, burnt marshmallow, very slight meat smoke, texture & ample off-dry malt, toasty vanilla, bite-y whiskey but not very hot. Lovely once it warms up a touch. Drank the whole bottle without a thought to my next round.

On tap at Khoury's right before closing. Crann beatha 10 impy whisky barrel. Thick, very dark brown on black, cookie dough head. Maple-y, sweet cream, mellow whiskey & coffee blend with just some bitter soot on the finish. Easy & tasty.
