De Heilig Hart Brouwerij in 2017 door Hans Dusselier en zoon Victor opgestart in de Heilig Hart Kerk te Kwatrecht (Wetteren). De bedoeling is om in de kerk een brouwerij te installeren met een gelagzaal. Daar zullen bezoekers de artisanale bieren kunnen proeven, maar ook de natuurlijke wijnen en de junmai sake's. Er zullen 3 stijlen op de markt komen: - In de naam van de Vader: voor deze categorie brouwen we aloude Belgische klassiekers, maar op onze manier, zonder additieven. Puur natuur, bijzonder evenwichtig (typisch Belgische stijl dus) en met een lange afdronk. Deze bieren brouwen we in de brouwerij 't Craywinckelhof. Voor deze stijl zijn nu al een Saison, een Dubbel en een Tripel op de markt. - In de naam van de Zoon: voor deze categorie zullen we later 'innoverende' of 'bijzondere' stijlen ontwikkelen. Dit wordt onze 'speeltuin'... - In de naam van de Heilige Geest: het zal niemand verbazen dat we hier bieren voorzien met een natuurlijk gistingsproces en/of met 'wilde gisten'. Small, white head over veiled orange-golden beer. Oranges, preserved oranges, Brettanomyces, muscade. Lactic acid, lemon, orangepeel. Bit vinous - malonic acid? Passion fruitjam, marmalade with syrup, unripe green kiwifruit, Bretts again. Acidburn and -thinning; good carbonation; slight dry-our effect. Original, convincing, if difficult to place. All the better.

Slight gushing to huge cream-amber head over hazy red-brown beer, quite lively carbonated. Vegetable, woody and fruity esters. Sweet smelling, liquorice. Dry, spicy, chocolate and some woody notes. Rootspices, scorza nera. Rather well-bodied, slick, smooth, the creamy head helping. Uber-classical dubbel. Good point: one that expressly admits the liquorice.

New embodiment of Heilig Hart’s first sour (a beer-wine hybrid and an immediate qualitative success back in 2019, as far as I am concerned), with tweaked recipe: whereas the original batch was aged on both clay amphoras and wooden barrels, this one omits the wood altogether; the wine must used comes from different grapes now (Gewürztraminer, Riesling and Sylvaer) and the hops are different too. Other than that, this 2020 version is also much stronger than the original – so a new entry here is indeed in order. No head at all, hazy apricot blonde robe with beige-ish tinge. Rich bouquet of freshly cut green apples, cooked yellow plums, clay from the amphoras, pumice even, unripe pineapple, wine must and indeed sweetish grapes, touch of honey even, lychee wine, soapy coriander, old dried thyme or other ‘herbes de Provençe’ and a rubbery touch reminiscent of sake. Very fruity onset, estery with more ripe and fleshy, sweet-sour fruitiness than the first batch, varying between red apple, yellow plum, lychee and pear, some very light carbonation, very vinous mouthfeel (but feeling a tad thicker than wine usually does). The grapes (or rather, the must) grow and grow in the middle, adding a sweetish white wine-like flavour which eventually becomes equally strong as this bready malt core underneath; lovely yoghurty acidity keeps everything in balance, while this clay-like amphora taste comes to the foreground further on (always a bit of an adaptation after hundreds of wood-aged beers!). The herbal notes (thyme, rosemary) from the nose return too, blending with the sweet-sour juiciness of the grapes; they accentuate the drying effect delivered by the lactic acidity. Alcohol warms, a tad sherry-like, but generally remains very well hidden. Fruitier, fleshier, juicier, ‘grape-ier’ and stronger than the first – a different creation indeed, and equally interesting.

The latest Heilig Hart creation to date, a sour ale with sea-buckthorn berries and aged in amphoras rather than wooden barrels. I had a sneak preview of this at the Heilig Hart brewery (think neogothic church!) before it was released and it was already very promising then, but this is my ‘official’ rating from a glass consumed at Ghent Beer Fest. No head whatsoever, cloudy peach blonde robe with beige-ish and orangey shades. Aroma of indeed sharp and sour sea-buckthorn berries, redcurrant, fermenting apple, wet clay from the amphora, old grapefruit zest, sourdough, sour grapes, oxidized dry cider, dried rosemary, lemon juice. Tart onset, lemony edges and clear sour berry astringency but not as harsh as one would expect (if you ever had actual fresh sea-buckthorn berries); this beer really fleshes out this type of fruit, with juicy redcurrant, sour grape and green apple aspects all tied to this typical sea-buckthorn berry flavour; near to flat body, oily and vinous so not feeling too ‘thin’ because of it – instead feeling more like a sea-buckthorn berry wine, but the bready core underneath yoghurty-lactic and fruity sourness cannot hide the fact that this is indeed a beer. The amphora reveals itself in a clay-like flavour while a somewhat odd, unexpected herbal aroma appears in the end, not unlike rosemary or even hyssop, no doubt coming from the same fruit again. Tart, yoghurty, vinous and very fruity, berry wine-like finish. Complex Heilig Hart product again, a little more smooth and juicy than in the beginning so ageing this one feels indispensable – who knows what flavours will come out of this within another six months or so. This brewery really stands apart on the Belgian beer map.

At BXL. Clear golden. Seabuckthorn, yoghurt, earthy, soft malts, plums. Medium sour, light salty. Quite unusual, not sure about this one.
