Drank at room temperature. The color is amber. The olfactory intensity is normal and lasts sufficiently. The taste on the nose recalls notes of strawberry and plum. The first impression of intensity in the mouth is of strong sake. The aroma on the tongue is rather sweet. The body is rounded. The flavor intensity is high, and the duration is sufficient. The final mouthfeel is drinkable sake. In the mouth the aroma is that of fruit, plum, anise, black pepper, mineral and umami, for a light taste.

300ml bottle, bottled 2022.4, a little old I know. Perfectly clear with a very light yellow-green tint. Aroma is kind of vinous (Sauvignon blanc?), pear, melon. Taste is the same, slightly vinous, pear, melon, nice fruitiness, pleasant warming alcohol finish. Really enjoyed this one.

11/5/2022. Bottle shared by danlo, cheers Ed. Region #391, Japanese region 21/47. Pours clear colourless with no head. Aroma starts sweet, with a big initial hit of dolly mixtures. Quickly moved on to aniseed, before mellowing. Keeps some candy sweetness, with fruity honeydew melon, and a light boozy edge. Fairly sweet, but with a nicely balance bitterness. Moderate body, oily, no carbonation. Developed well, enjoyed it.

300ml bottle from Kitcho, Greenwich. Clear with just a hint of yellow colour, no head and aroma of rice, fruity, melon. Taste is fruity, melon, rice, caramel, mellow, boozy. Oily mouthfeel, medium bodied, low carbonation, drying warm boozy finish. Nicely drinkable

My first sake, not really sure what to expect. Sweet and fruity on the nose, with a whiff of spirit. From a taste perspective there's a touch of alcohol burn to begin with then it smooths out to reveal a mellow, sweet fruity flavour with a touch of bitterness in the finish, the mouthfeel having a very slightly viscous, oily feel to it.

Drank at room temperature. The color is a hint of yellow. The taste on the nose - dominant aroma is of malted rice Koji. The first impression of intensity in the mouth is of medium strength’s sake. The body is round. The taste intensity is normal, and the taste persistence is sufficient. The taste is pleasant. The final mouth sensations are ready to drink. The taste is given tones of vanilla, apricot, mushroom, gin, spices and soy sauce.

Drank cold. The degree of transparency is veiled, and the appearance is cloudy. The degree of color is dirty green. The olfactory intensity is high and lasts appreciably. The taste on the nose is of kiwi and citrus. The first impression of intensity in the mouth is of strong sake. The body is full. The taste intensity is high, and the taste persistence is good. On the palate the aftertaste is intense and persistent. The final mouth sensations are of squeezing the tongue, where hints of yuzu, sweet and bitter at the same time are found.

Drank cold. The olfactory persistence is appreciable. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas are of melon, fruit and green apple. The first impression of intensity in the mouth is of powerful sake. The body is structured not heavy. The taste intensity is high, and the taste persistence is good. On the palate the sweetness is medium, the body is strong, and the aftertaste is intense. The taste is pleasant. The final mouthfeel sensations are of ready to drink, for a sake that tends more towards dry. The finish is velvety. The aroma in the mouth brings hints of white peach, melon, green apple and almond.

[as Nanbu Bijin All Koji 2018 Sake] Drank cold. The color is golden yellow. The nose taste - aroma is decidedly of malted Koji rice. The nose taste - secondary aromas finds impressions of cooked fruit and honey. On the palate the sweet is strongly sweet. The body is structured. The taste intensity is high, and the taste persistence is good. The aftertaste is intense and persistent. The taste is very pleasant. The final mouth sensations induce compulsive drinking, also for an umami component. The roof of the mouth recognizes impressions of white peach, melon, dried apricot, banana and mushroom.
