Soft, earthy, floral, clean, with light alcohol but not raw. Cooked rice, though not thick and creamy, but still rich. Strong, intense, austere.

Bottle from Crafted. Cloudy pour not as bright as some nigori touch of green tinge to it. Nose on initial pour was huge anise but then once things settled more subdued and get melon and rice. Tatses of licorice, honey dew, rice, basil, touch of strawberry and coconut husk. Smooth enough. Lingering fruity rice finish.

Local sake you know I’m game, yes the rice is from Arkansas but alas. Quite clear looking. Nose is very light some melon and almond. Tatses of licorice, honey dew, almond skins, simple syrup. Rice water lingers on finish. Light alcohol for abv hidden well.

Clear white.
Nose has soft, delicate jasmine and a bit roasted tea leaves with great minerality and acidity. It gives it both an earthy and floral character and takes it in quite a different direction.
Soft and quite dry, the tea and jasmine adding moderate amounts of their signature notes (floral, fruit, earth, vegetal, roast) to the sake while it still maintains the high minerality and good fruitiness and balance. I definitely prefer the uninfused version, but this was interesting.

Nose is surprisingly restrained on the adjunct. It's melded with the already present pineapple and coconut notes so it really just augments them some. Clean, well-done adjunct-wise and with no alcohol. High acidity and minerality.
Soft, sweet, succulent with strong cooked rice sweetness and good acidity. Adjuncts aren't remotely overdone and it just makes it a bit more fruity than the base sake. No alcohol or flaw noted.

More acidity and a little less fruitiness than the Yamadanishiki sakes here, with a tell tale note of what the brewer describes as \"grain sack\" and it's about as good as a descriptor as I can think of. There's mineral, light yellow fruit and very clean rice with no alcohol or flaw.
Soft and grainy in the mouth with zesty fruitiness and good acidity throughout. Very full, yet not thick/syrupy/coconutty. Good acidity on the end with strong mineral and a very unique character from the Omachi rice.
