Description
We are artisan producers at the heart of Somerset’s cider-land making whole juice sparkling cider by the old English method of keeving.
Apples are collected from traditional cider orchards in and around the parish of Pilton and slowly fermented for six months in our cool Victorian cellar before bottling.

Bottle 375ml. @ [ Højbjerg Tasting ] - Saxo House, Højbjerg - Aarhus, Denmark.[ As Pilton Fire ].Clear medium orange amber colour with virtually no head. Aroma is moderate to heavy apple, apple syrup, concentrated apple, caramelized apple, rich intense apples. Flavor is moderate to heavy sweet with a long duration, caramelized apple, rich intense apples, apple syrup, concentrated apple, dry, tart. 375ml bottle. Pours a comforting hazy gold, nose brings unmistakable Laphroaig notes, though thankfully quite gentle. Taste is complex, smokey, tightened by a firm astringency. Would've liked more of a plummy influence, which is sadly lacking but the smokey character is refreshingly different.

75cl bottle. Pours clear golden copper, light fruity nose. Taste is clean, balanced, light with subtle yet distinct quince integration, distant wood.. clearly a cider rather than a perry, but with a more delicate keeved character rather than the smooth, fleshy fruit that typify Pilton's standard range. I like it, it has finesse, subtlety and it's great to see quince in an English cider.

750ml bottle. Vintage 2016. Sparkling, orangey-gold amber colour, short-lived fizzy white foam head and aroma of tangy apple, oak, caramel. Taste is sweetish, fruity apple, woody oak and caramel hints, with some light earthy funk and drying tannin. Light to medium bodied, spritzy carbonation, dry finish. Nicely drinkable.
