Les caractéristiques des bières brassées sur lie de vin (ici cépage sauvignon et chenin) sont usuellement leur complexité, leur acidité et leur dynamisme. Si pour ma part, je ne suis pas le plus grand amateur d'acidité, je les suis de la complexité et du dynamisme. Et la Goutte d'Or s'est ici relativement ratée car cette bière est peu acide et peu dynamique...elle décevra donc pas mal d'amateurs. Le visuel est toutefois sympathique avec un joli blond doré parfaitement limpide avec une fine effervescence soutenue et une mousse blanche de 5 mm. Le nez est sur une alliance de céréales, citron, d'odeurs de ferme, de cuir, de vin. A la dégustation, on retrouve les codes d'une bière sur lie de vin mais sans dynamisme. Tout est molasson avec une complexité appréciable toutefois. Mais je m'attendais à davantage de tempérament. Dommage.

Old rating - A 330ml bottle from La Cave a Bulles in 2014, notes from the following year - Pours a deep amber with a white foamy head. Aromas & tastes of caramel, grapefruit, pine, earth & malt. Medium bitter finish. Very well-made IPA.

On tap at Goutte d’Or, pours a deep dark mahogany brown with a small beige head. Aroma brings out the pepper in a sort of aniseed type of way, rustic saison yeast, and a touch of leather. Flavour is unique, revealing that unique aniseed-like pepper character that melds well with the saison yeast. Rustic, peppery and almost fruity finish. Excellent.

On tap at Goutte d’Or, pours a clear golden with a small white head. Aroma has some citrusy hoppinees, rustic saison yeast, and toasted grains. Flavour has a nice gentle citrusy hoppinees on top of the rustic saison yeast character. I prefer the Garance but this is done decently.

On tap at Goutte d’Or, pours a hazy golden with a small white head. Aroma has rustic saison yeast, gentle wild bugs, and some light biscuity malt. Flavour has a nice gentle bugginess, rustic saison yeast, and dry, spicy finish. Really competently made — the wild yeast is expressed very nicely.
