On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

On tap at Tom’s brewery. Pours a murky pale orange with a small white head. Oranges and floral hops in the nose. Initially sweet in the mouth with peaches noticeable, but gradually the bitterness of floral hops comes through. Very nice and hides its strength well.

NEW REVIEW Well this beer is so much better than the original review implied that I just had to rerate it. Cask at Crewe Dog, Crewe. Pours a very dark reddish-brown with a small cream head and good lacing. There’s malts in the aroma, plus some hints of toast. Malts again to the fore in the mouth where it is slightly sweet and a tad watery. Flavour has chocolate, dark ruit and oats, plus some hints of cola. Finish is slightly dry. Tastes rather nice – packs a good punch for it’s strength. Conclusion – this beer is much better in cask than on tap – and the brewer agrees !! ORIGINAL REVIEW On tap at Tom’s brewery. Pours pretty much jet black with minimal head. Malts to the fore in the nose. Watery in the mouth. Malts again with some dark fruits, and hints of chocolate. Finish is quite dry. Somewhat pedestrian and forgettable – but still a decent beer. 5;3;5;3;10 = 2.6

Cask at hops, Crewe. As intrigued by this as Black IPAs are one of my favourite beer styles, but Kveik yeast I find pretty repulsive. Which characteristic would win out ? Pours almost black with a decent sized frothy cream head and good lacing. Vanilla and yeast in the aroma. In the mouth it starts off aweet and fruity, but then a bitterness of kveik yeast kicks in. There are blackcurrants and figs, plus hints of liquorice. Finish is fruity but quite bitter. A bit of a mess really – the advertised ingredients are all there, but they don’t gel together.

Keg tap at Tom's Tap & Brewhouse, Crewe. Deep gold and clear with a spotty white head. Malty nose, with light citrus and a slightly metallic character. Bittersweet taste, some caramel and bittering hop leading to a long balanced finish. Medium carbonation. Okay.

Draught keg at Tom's Tap and Brewhouse, Crewe. Dark gold, a bit murky with a flat white head. Hoppy aroma with floods of pink grapefruit peel and tangerine. Initially sweet with bitter hops balancing the taste. Long fruity and floral finish. Heavy carbonation. Excellent for a difficult style.

Keg draught the brewery tap as 'Chad's Sour'. Purplish brown and hazy with a film of off-white head. Tart and creamy blueberry aroma, not that strong but still enticing. Taste borders on the sweet, with the tartness suggested in the aroma not really delivered. Short finish, flat body. A little dull but drinkable.

Handpull cask at Hops, Crewe. Black with an off-white head, a lovely striking contrast. Perfumed, flowery and piney hop combines with gritty malt and notes of liquorice. The initial sweetness quickly gets bogged down in an intense bitterness which follows to the finish. More liquorice and tart blackberry in the aftertaste. Flat only body. Enjoyable if a little messy.
