On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

28/10/2021. Keg at the 2021 Norwich Beer Festival. Pours hazy/cloudy pale golden orange with a small bubbly/frothy white head. Aroma of mango, pineapple, biscuit, peach, malt, straw. Medium plus sweetness, moderate bitterness. Medium body, slight creamy texture, soft carbonation. Good.

Keg at Norwich Beer Fest: Poured a hazy yellow with a white head. Aroma is tropical, vanilla, candy. Taste is hoppy bitter, tropical fruits, citrus, melon, lively in the finish.

On tap at Crewe Dog, Crewe. ~pours a murky peach with medium sized frothy white head. Aroma has generous helpings of banana and floral hops. Sweetness is the initial sensation in the mouth, together with the time honoured witbier flavours of banana, cloves and bubble gum. Plus some wheat malt and hints of floral hops. Finish is sweet with bananas. A very good witbier – I can’t believe it’s not Belgian !

On tap at the brewery. Pours almost black with minimal head. Oats to the fore in the aroma, with roasted malts in the background. A little sweet and watery in the mouth. Flavour combines dark fruits, vanilla and oats plus traces of roasted malts and a general seafood feeling. Slihtly fruity in the finish. The is nice and quite swiggable.
