On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

31/7/2022. Can bought at Tom’s Tap by danlo, cheers for this Ed. Pours rich, black, with a large frothy deep tan coloured head. Aroma is dark chocolate, chocolate syrup, toffee, vanilla, roasted malt, liquorice, ash, waxy edge. Medium sweetness and light to moderate roasted bitterness. Quite full bodied, oily slick mouthfeel, soft carbonation. Very good.

On tap at The Green Goddess Brewpub, Blackheath Standard. Black pour with a light tan head. Nose is dark chocolate, liquorice toffee, creamy coffee, raisin. Taste is very much the same. Unsurprisingly dry. Roasty malty finish. Goes down very nicely.

Frothy off-white fair mostly diminishing head. Black colour. Heavy malty and moderate hoppy aroma. Heavy bitter flavor. Long heavy bitter finish. Creamy palate.

Outstanding. All the best bits of the standard dark mild, but with a bit more body and a lovely coconut flavour.

Cask at Hops, Crewe. Pours a cloudy golden orange with a sizeable foamy white head and good lacing. There’s floral hops in the aroma. In the mouth there is a brief burst of sweetness before bitterness ccomes to dominate. Flavour has floral hops, mango and tropical fruits. Finish is somewhat bitter. This is reasonable and very refreshing.

Cask at Borough Arms, Crewe. Pours a golden amber which is slow o settle, but eventually clears with a small foamy white head and good lacing. Malts to the fore in the aroma, plus traces of nuts and summer fruits. In the mouth it is sweet and smooth with cakey malts plus hints of oranges and antiseptic. After a while the alcoholic strength starts to show, which leads to a boozy finish. Interesting.

Tap at BeerHeadz Lincoln. Off black colour with a medium tap head. Aroma and taste are malty coffee roasted bitter. Slightly thin body.

On tap at Ebenezers, Crewe. Pours completely black with no head whatsoever. There’s definitely nuts in the aroma, but it’s probably autosuggestion to claim I identified them as pecans. Dark fruits in the mix as well. In the mouth it is sweet with maple and a little chocolate. Oats come through in the finish to remind us that Mighty Stout is an oatmeal stout. Hard to work up much enthusiasm for this – maple is a bit of a bland flavour.
