On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

On tap at Ebenezers, Crewe. Pours oalmost black with medium sized cream head and good lacing. The aroma has treacle, coffeee, chocolate and roasted malts. In the mouth roasted malts are the mainstay to start, along with vanilla and coffee, plus some hints of liquorice and ginger. Later on some chocolate comes through and is to the fore in the finish. This is rather nice.

Panda at home, thanks to Edward Danlo, 09/03/23. Moderately hazed golden orange with a just off white cap that stays for the show. Nose is sweet malts, apricot, mango sorbet, vanilla essence, icing sugar. Taste comprises tangy mango, vanilla, lactic twang (lactose or not!), melon, straw, lemon meringue. Medium bodied, fine carbonation, semi drying close with modest hop bitterness. Ok refresher ... does what it says on the tin.

Panda 🐼 at home big thanks to Ed Danlo. A light hazed golden orange coloured pour with a fine white head. Aroma is soft wheat, pineapple, light brett, funk, candy apple. vanilla. creamy wheat, light tang. apple custard. floury wheat, grass, fizzy pineapple. fine carbonation, Little odd.

500ml can bought at Tom's Tap. Slightly hazy yellow colour, white foam head and aroma of ice cream, vanilla, mango. Taste is sweet, ice cream, mango, fruity citrus, with some hoppy bitterness. Medium bodied, soft carbonation, drying fruity hoppy light bitter finish. Nicely drinkable.

On tap at the brewery tap. Described as a “cheesecake biscoff porter”. Well I have no idea what biscoff tastes like, but I certainly get the cheesecake ! Anyway, pours almost black with minimal off-white head. There’s a strong aroma of cheesecake, and tis contines into the mouth where the overall effect is sweet. Alongside roast malts, biscuits and dark fruits. Very nice indeed – hides its strength well.

Cask at Crewe Dog, Crewe. Pours a murky pale orange with minimal off-white head. Not much of an aroma – just some vague tropical hints. In the mouth, tropical fruits are more distinct with mango and grapefruit initially, plus oranges and a trace of lemon later. Finish has a dollop of sticky citrus. Not my kind of beer at all.
