On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

Cask at Crewe Dog, Crewe. Pours a very dark reddish-brown with a small cream head. Oodles of chocolate in the aroma. Chocolate again the mainstay in the mouth, along with roast malts and crunchy biscuit crumbs. Hints too of liquorice and lemon. This is rather nice – like liquid Bourbon biscuits.

Cask at Hops, Crewe. Pours a hazy golden yellow with a small white head and good lacing. The aroma has grains and a hint of citrus. In the mouth it is quite bitter initially, with av variety of hops. Flavour has tangerine, grapefruit and hints of melon. Finish is dry and slightly sticky. Decent enough but a bit nondescript.

On tap at Ebenezers, Crewe. Pours a hazy gold with a small white head and good lacing. There’s grains and summer fruits in the aroma. In the mouth it is smooth with a slight bitterness. Flavours of corn, grains, summer fruits and traces of citrus. Later continental hops come to the fore plus some hints of spices. Finish is dry and slightly sticky. Not at all bad.
