On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

20/1/2024. Can shared at CLBF/IKL. Bought direct from the brewery. Pours close to black with a small frothy beige head. Aroma is nutty, chocolate, roasted malt, dark fruits. Medium sweetness, moderate bitterness, touch tart. Moderate body, slightly watery, average carbonation. A little disappointing.

Keg @ Hops, Crewe. Pours a generally clear gold with a light mist, white head. Sweet bready malt aroma. Quite a sweet kolsch to taste, light floral shades, decent, flavoursome.

This is a flavoured mild – a style not recognised by RB. On tap at the brewery. Pours almost black with a medium sized cream head and good lacing. The aroma has biscuits, malts and oats with a hints of cinnamon and ginger. The spicy hints are the first thing that the taste buds notice in the mouth, even though they are not particularly strong. More mainstream flavours are provided by cola, biscuits and malt with hints of treacle. Later on there are glimpses of alcoholic strength. Finish is slightly bitter and a little fruity too. This is rather nice – I prefer it to the standard DDM.

Cask at Hops, Crewe. Pours almost black with a sizeable cream head and good lacing. Malts, caramel and biscuits are the mainstays of the aroma. In the mouth it is quite sweet with malts again to the fore alongside traces of chocolate and ginger. Later on the alcoholic strength starts to show through plus hints of caramel. Finish is slightly sweet and quite boozy. This is quite decent, but I think I preferred the “single” version.

Cask at Petersgate Tap, Stockport. Pours deepest brown towards black with a tan foam. Aroma: sweet toasty malts, chocolate. coffee hints. Taste: moderate sweet & light to moderate bitter, rich & full bodied. More like a stout or porter but it was very good.

Keg @ Hops Belgian Style Beer Cafe, Crewe. Black with a light-brown head. Crisp keg pour slightly lessening the effects of its robust roasted malt character, with a lingering aftertaste including some coffee.

Keg @ Tom's Tap & Brewhouse, Crewe. Dark brown with a creamy head. Crisp steady mild, easy strength, good aroma, very lightly toasted.

GBBF Day 2. Cask. Almost clear deep amber brown beer, tiny tan head. Smooth and very dry palate, modest fine carbonation. Thin dark malts, a little cream and papery chocolate. Modest ripe fruits. Dry finish. Okay but bloody dry.
