On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

23/1/2021. Fresh crowler shared at the first Ipswich Lockdown 3.0 virtual bottle share. From Tom's Tap & Brewhouse, Crewe. Pours cloudy orange with a bubbly white head. Aroma is dank, earthy, hoppy, piney, herbal. Medium sweetness, light bitterness. Moderate body, soft carbonation. Bitter grapefruit finish comes through.

Aroma of dark chocolate, carob, cinnamon, biscuit, light orange. Moderate sweetness and light roasted bitterness. Liked it but lacked the orange.

Aroma of chocolate, toffee, mild roasted malt, biscuit and crème caramel. Medium sweetness, light roasted bitterness. Medium body, slightly oily texture, soft carbonation. Didn't seem like 7.4% but enjoyed it.

Aroma is ashy, chocolate, mild roasted malts, dark fruits. Moderate sweetness, light roasted bitterness. Moderate body, soft carbonation. Fruity chocolate finish. Pretty decent mild.

Aroma of light spicy hops, citrus, grapefruit, grass. Medium sweetness, moderate bitterness. Moderate body, slightly oily, average carbonation. Nice bitter finish. Pretty decent.

Aroma of toffee, biscuit, brown sugar, fruit and veg. Medium sweetness, light bitterness. Moderate body, slight watery/oily texture, soft carbonation. Liked this.

Aroma is sweet, banana, herbal, coriander, touch of honey and perfume with a slight singed edge. Medium plus sweetness, light bitterness. Medium body, average carbonation. Sweet finish. Not bad, though not a style I'd normally seek out.

Pours very dark brown with a purple tint and a small off-white to beige head. Aroma doesn't really deliver the rum'n'raisin promised. Moderate sweetness, light roasted bitterness. Light bodied, soft carbonation. As a milk stout it's fine but I like rum'n'raisin but didn't really get much from this one.

Aroma of sour passionfruit, citrus and grass. Light sweetness, moderate sour. Moderate body, average carbonation. I love passionfruit but something about this one didn't seem to work.

Aroma of stilton cheese, dill, citrus, stewed cabbage. Light sweetness, medium bitterness. Medium body, average carbonation. Heavy bitter Sorachi Ace hop finish - some don't, but I like it.
